Did a bit of cooking and baking last 2 days. Made my Instant Pot Pea Soup yesterday and 2 Lemon Loaves today. I’m going to meet my friend, Margit in West Vancouver tomorrow and these are 2 of her favourites. Will take a train and then a bus across the bridge and then a shuttle once I get to West Vancouver. Kind of a fun field trip! I really enjoy our get togethers after all our friendship is more than 25 years. Recipe for Instant Pot Pea Soup is posted in the comments and the Lemon Loaf is also in the comments part of the picture.

Baked Chicken Greek Meatballs. Putting this one on my list of "to make soon"! Sounds so good with all those flavours and I may mix 1 pound turkey instead of 2 pounds of chicken. Also I'm sure you can bake these in your Air Fryer as an alternative. by Andy’s East Coast Kitchen

My Mom and Dad used to make Pepper Jellies to use with Rice Crackers and cream cheese. I miss that! Time to make some myself. If you scroll down in her post she has several other types and I may try the Rosé Jelly. Would be great to give as little gifts too. by The view from Great Island

EASY Hot Pepper Jelly ~ no canning required! This stuff is crazy good with cheese and crackers.

Tonight I made a favourite dish I’ve made probably 6 times already. Always a bit different depending what veggies I have on hand. Is called One Pot Lemon Chicken, Spinach and Asparagus Orzo. I used Zucchini today and Swiss Chard from my garden. Sometimes I used Broccoli or Spinach. It’s a delicious meal! Will I make it again? You bet! By Spoonful of Flavor

Made a few pints of my Mom’s Bread and Butter Pickles between yesterday and today. The worst part of the whole process is the slicing of the cukes but my hubby did that part with my Dads’s mandolin he bought a zillion years ago at the PNE. These are my favourite pickles! I do dills too but these come in first for me. Could eat them with anything! Recipe is in the comments section.
