There's only so much leftovers you wanna eat, so making it into something else is a great way to reduce food waste. I made a ton of mashed potatoes and this is a great way to use them up.
Gnocchi is a pillow soft potato dumpling.

My mashed potatoes were made with milk and sour cream. I would not use skin on mashed potatoes for this. The amount of flour is more suggested because it depends on the moisture of your potatoes.

Start with the cup and add as needed. The dough should be soft but not sticky.

1 cup mashed potatoes
1 egg
1 cup flour + more as needed

Mix it together, adding more flour if needed to make a soft dough, roll out into logs and cut into 1 inch pieces.
Boil until they float then remove from the water.
Cook in sauce or brown butter, salt and pepper to taste.

Odd bunch gave me something called broccoli rice. "Rice" sure ...essentially chopped up broccoli stalks. Anyhoo, I had to figure out something to do with it, and I had an idea.
Behold the broccoli and cheese bread! Recipe below.

2 cups all purpose flour
2 tsp bkg powder
1/2 tsp bkg soda
1/2 tsp salt

1 egg
1 cup milk + 1 tbsp lemon juice or 1 cup buttermilk
3 tbsps butter
1 1/2 cups broccoli rice (could also use grated and squeezed zucchini)
About 1 cup cheddar cheese
1 minced garlic clove
1/4 cup chopped scallion

Mix dry, then wet, then fold in cheese, broccoli, garlic and scallions.

Bake at 350F for 50-60 mins

If you are like me, you are always looking for something interesting to make. These arayes were yum and easy. You can use store bought pita if you aren't feeling adventurers.

This makes enough filling for 10 pitas:

1lb ground lamb
1lb ground turkey
1 medium onion, grated
5 cloves of garlic, minced
1/2 cup chopped fresh parseley
1 tsp ground all spice
1 tsp ground cinnamon
2 tsps ground cumin
1 1/2 tbsp tahini (optional)
Salt and pepper to taste

Directions: mix all ingredients with you hands or in a stand mixer until well mixed.

Tip: I make a tiny tester patty and cook it to test seasoning.

Spread a layer of filling on a pita and cook, starting face down in a cast iron skillet for 3-5 minutes on each side on medium heat.

Strawberry sourdough sweet rolls.

Sweet roll dough
400g bread flour
100g water
100g milk
20g sugar or honey
20g melted butter
8g salt
1 lg egg

Food is crazy the way it holds memories. Whoopie pies always take me to Pennsylvania. 🥰 and I'm chomping a chocolate one made with love, cackling outside in Juniata County with Jamie.

Next, I'm in Reading Terminal Market in the in the Fall, having a pumpkin whoopie pie from the Amish stall.
