Garlicky Beef Pitta Feast Recipe:

Ingredients:
4 garlic cloves, crushed
3 tablespoons low-sodium soy sauce
1Β½ teaspoons sugar
ΒΌ teaspoon red pepper flakes
450g beef sirloin, thinly sliced
3 spring onions, chopped into small pieces
1 teaspoon vegetable oil
1 teaspoon water
1 teaspoon cornflour
4 cups fresh lettuce leaves
4 Mr Pitta Bread rounds, cut in half

Method:
In a bowl, combine the crushed garlic, soy sauce, sugar and red pepper flakes. Add the thinly sliced beef and toss until well coated. Set aside to allow the flavours to combine. In a separate small bowl, mix the cornflour with the water until smooth.

Heat the vegetable oil in a wok or large frying pan over high heat. Stir-fry the marinated beef until cooked to your liking, reserving any remaining marinade. Remove the beef from the pan and keep warm. Add the reserved marinade and cornflour mixture to the pan, cooking briefly until the sauce thickens.

Return the beef to the pan and toss with the sauce and chopped spring onions. Fill each Mr Pitta Bread half with fresh lettuce, then spoon in the flavour-packed garlicky beef mixture. Serve warm and enjoy!

Ingredients:
​​‒ 2 x 17cm Mr Pitta Breads, cut in half
​​‒ 8 eggs
​​‒ 1/2 teaspoon salt
​​‒ 1/4 teaspoon black pepper
​​‒ 2 teaspoons paprika or chilli powder (optional)
​​‒ 4 pieces of pre-cooked bacon, diced
​​‒ 4 tablespoons fresh chives, finely chopped
​​‒ 1/2 cup shredded cheddar cheese, or your preferred cheese

Method:
In a medium bowl, whisk together the eggs, diced bacon, chopped chives, salt, black pepper and paprika or chilli powder. Lightly grease a medium frying pan with cooking spray and heat over medium heat. Pour in the egg mixture and allow it to cook without stirring until the edges begin to set.

Using a spatula, gently lift and fold the eggs until they are fully cooked, around 1–2 minutes. Spoon the scrambled egg mixture evenly into the Mr Pitta Bread halves, then top with shredded cheese and extra chives. Serve warm and enjoy!

Ingredients:
​​‒ 6 Mr Pitta Breads
​​‒ 400 g fish fillets
​​‒ 2 cups water
​​‒ Salt, to taste
​​‒ 4 tablespoons cooking oil
​​‒ 2 tablespoons minced ginger and garlic
​​‒ 4 fresh red chillies, finely chopped
​​‒ 8 spring onion whites, chopped
​​‒ 8 spring onion greens, sliced
​​‒ 2 tablespoons soy sauce
​​‒ 2 teaspoons vinegar
​​‒ 1 teaspoon sugar
​​‒ 8 tablespoons chopped tomatoes
​​‒ 1 teaspoon crushed black pepper
​​‒ Lettuce leaves

Method:
Cut the Mr Pitta Breads in half and carefully open each half to create pockets. Set them aside while preparing the filling. Bring the water to a gentle boil, add a little salt, and cook the fish fillets for around 5–10 minutes, or until just cooked through. Drain the fish and allow it to cool slightly before gently breaking it into bite-sized flakes.

Heat the oil in a large pan over medium heat. Add the minced ginger and garlic, followed by the chopped red chillies and spring onion whites. Cook for a few minutes until fragrant, then stir in the soy sauce, vinegar, sugar and chopped tomatoes. Allow the mixture to simmer until the tomatoes soften and create a flavourful sauce. Add the flaked fish and gently toss everything together.

Season the chilli fish mixture with salt and crushed black pepper, then remove it from the heat. Place a fresh lettuce leaf inside each Mr Pitta Bread pocket and spoon in the warm, flavour-packed chilli fish filling. Sprinkle with the sliced spring onion greens if desired, then serve immediately and enjoy.

​​‒ 500 g boneless, skinless chicken breast, cut into bite-sized pieces
​​‒ 1 small red onion, roughly chopped
​​‒ 2 capsicums, chopped into bite-sized pieces

​​‒ 2 tablespoons olive oil
​​‒ Salt and black pepper, to taste
​​‒ 1/3 cup basil pesto
​​‒ 4 Mr Pitta Bread pockets

Method:

Preheat the oven to 220Β°C. Place the chicken, red onion, capsicums and zucchini on a large baking tray. Drizzle with olive oil, season with salt and pepper, and toss until everything is evenly coated.

Roast for about 10 minutes, then remove the tray and turn the chicken and vegetables. Return to the oven and cook for another 8–10 minutes, or until the chicken is fully cooked and the vegetables are tender and lightly roasted.

Transfer the cooked chicken and vegetables to a large bowl. Add the pesto and gently toss until everything is coated in the rich, herby sauce. Warm the Mr Pitta Bread pockets, then fill each one with the pesto chicken and roasted vegetable mixture. Serve warm and enjoy!

​‒ 60ml extra virgin olive oil
​‒ 1 small lemon, zested and juiced
​‒ 1 tbsp fresh oregano, or 1 tsp dried oregano
​‒ 2 tbsp fresh thyme, or 2 tsp dried thyme
​‒ 1 bay leaf, optional
​‒ 3–4 large garlic cloves, crushed
​‒ 6 Greek-style Mr Pitta Breads
​‒ 2 cups tzatziki sauce
​‒ 1/4 iceberg lettuce, shredded
​‒ 2 large tomatoes, sliced
​‒ 1 red onion, thinly sliced
​‒ 150g feta cheese, crumbled
​‒ 450g oven fries, optional
Method:
Prepare the marinade: Mix the paprika, cumin, cinnamon, salt, pepper, oregano and thyme in a large bowl. Stir in the honey, lemon juice and zest, garlic, bay leaf and olive oil. Add the lamb and toss to coat well. Cover and refrigerate for 1–2 hours or overnight. For a quicker option, marinate for at least 30 minutes.

Cook the lamb: Preheat the oven to 200Β°C/430Β°F and line a baking tray with baking paper. Arrange the lamb in a single layer and bake for 15–20 minutes, or until cooked to your liking. While it cooks, prepare the lettuce, tomatoes, onion, feta, fries and tzatziki.

Build the pittas: Warm the Mr Pitta Breads in the oven or a pan until soft. Place each pitta on baking paper and spread with tzatziki. Add the lamb, onion, tomatoes, fries, lettuce and feta. Fold in the sides and roll up, tucking the bottom underneath to secure the filling.

Easy Grilled Chickpea Pittas Recipe:

Ingredients:
Chicken Filling
​‒ 4 tbsp avocado oil, divided​
​‒ 2 Γ— 15 oz cans chickpeas, drained
​‒ 1 yellow onion, diced
​‒ 2 red bell peppers, diced
​‒ 8 oz mushrooms, diced
​‒ 10 garlic cloves, minced
​‒ 2 tbsp tomato paste
​‒ 1 tbsp soy sauce
​‒ 4 tsp za’atar
​‒ 1 tsp cumin
​‒ 1 tsp coriander
​‒ 1/2 tsp fennel seeds
​‒ 1/2 cup parsley, minced
​‒ Salt and pepper, to taste

Pitta
​‒ 6 Γ— 17 cm Mr Pitta Bread

Cilantro Garlic Yogurt Sauce
​‒ 1 cup plain vegan Greek-style yogurt
​‒ Juice of 1 lemon
​‒ 2 garlic cloves, crushed
​‒ 1/2 cup cilantro, minced
​‒ 4 tsp olive oil, optional
​‒ Salt and pepper, to taste

Method:
Place the chickpeas in a bowl and roughly mash with a fork. Heat 1 tablespoon of oil in a pan over medium heat. Add the onion, bell pepper, and mushrooms, then sautΓ© for 2–3 minutes. Add salt and cook until the vegetables soften and most of the liquid evaporates.

Add the garlic and cook until fragrant. Stir in the tomato paste, mashed chickpeas, soy sauce, za’atar, cumin, coriander, and fennel seeds. SautΓ© for 2–3 minutes, then mix in the parsley. Adjust the seasoning and set aside.

Preheat a griddle. Cut the Mr Pitta Bread in half and carefully open the pockets. Fill generously with the chickpea mixture, then lightly brush with the remaining oil. Grill filling-side down for 3–4 minutes until grill marks appear. Flip and cook for another 3 minutes. Repeat with the remaining pittas.

For the cilantro garlic yogurt sauce, whisk all ingredients together and season to taste. Serve the grilled stuffed Mr Pitta Bread warm with the sauce and your favourite fresh vegetables.

​‒ 6 Mr. Pitta Breads, warmed and gently opened at the top
​‒ 400g feta cheese, cut into 2cm cubes
​‒ 250g jarred roasted peppers, drained and thinly sliced
​‒ 100g pitted Kalamata olives, sliced
​‒ 60ml olive oil
​‒ 1 red chilli, deseeded and finely sliced
​‒ 1 tbsp dried oregano
​‒ 50g fresh basil leaves, picked and roughly torn
​‒ 2 gem lettuces, leaves separated and roughly torn

Method:

In a large bowl, combine the feta cheese, roasted peppers and sliced Kalamata olives. Drizzle over the olive oil, then add the sliced chilli, dried oregano and fresh basil. Gently toss everything together until well combined, allowing some of the feta to crumble slightly while keeping some cubes whole.

Cover the bowl and place it in the fridge to marinate for at least 1 hour, giving the flavours time to blend. Remove the mixture from the fridge about 15 minutes before serving to take the chill off.

Warm the Mr Pitta Bread until soft and lightly heated. Carefully open each bread and generously spoon in the marinated feta mixture. Add a generous handful of crunchy gem lettuce for a fresh contrast to the creamy feta and juicy vegetables.

​‒ 1 large sweet red pepper, halved and sliced
​‒ 1 large tomato, seeded and chopped
​‒ 3 tablespoons olive oil, divided
​‒ 1 medium onion, halved and sliced
​‒ 1/4 cup pitted ripe olives, coarsely chopped
​‒ 12 garlic cloves, halved
​‒ 1 teaspoon salt
​‒ 1/4 teaspoon black pepper
​‒ 1 cup loosely packed fresh basil leaves, coarsely chopped
​‒ 1/2 teaspoon crushed red pepper flakes, optional

Method:
Slice the eggplants into 3/4-inch rounds and place them in a colander over a plate. Sprinkle with salt, toss gently, and let them rest for 30 minutes. While the eggplant rests, place the sliced red pepper, onion, and garlic in a bowl. Add 1 tablespoon of olive oil and toss to coat. Transfer the vegetables to a grill wok or open grill basket. Grill over medium-high heat for 8–12 minutes, stirring regularly, until tender and lightly charred.

Rinse the eggplant slices and pat them dry with paper towels. Brush them with another tablespoon of olive oil and season with black pepper. Grill over medium heat for 4–5 minutes on each side, until tender, then cut into quarters. Brush both sides of the Mr Pitta Bread with the remaining oil.

Grill over medium-low heat for 1–2 minutes, until lightly browned underneath. Remove from the grill and top with the grilled vegetables, tomato, mozzarella, and olives. Ingredients:
​‒ 750 g boneless, skinless chicken thighs
β€’ 1 onion, thinly sliced
β€’ 2 garlic cloves, minced
β€’ Juice of 1/2 lemon
β€’ 4 tablespoons olive oil, divided

​For the Seasoning Mix:
​‒ 2 teaspoons ground cumin
​‒ 2 teaspoons paprika
​‒ 1 teaspoon allspice
​‒ 1 teaspoon ground cinnamon
​‒ 1/2 teaspoon ground cloves
​‒ 1/2 teaspoon ground cardamom
​‒ 1/4 teaspoon cayenne pepper
​‒ 1 teaspoon salt

Method:
Preheat the oven to 450Β°F (230Β°C). Cut the chicken thighs into thin strips, about 1/2 inch thick. In a bowl, combine the lemon juice, 1 tablespoon of olive oil, garlic, and all the seasoning mix to form a paste. Add the chicken strips and sliced onion, then toss until everything is well coated. Cover and marinate in the refrigerator for a few hours or, ideally, overnight. If you are short on time, you can cook the chicken immediately.

Add the remaining 3 tablespoons of olive oil to a large baking sheet and spread it evenly. Place the empty baking sheet in the preheated oven for 5–7 minutes to heat the oil. Carefully remove the hot pan and arrange the marinated chicken evenly across it. Bake for 15–20 minutes, or until the chicken is fully cooked and the juices run clear. For extra colour and crispiness, broil the chicken for a few minutes at the end. Serve the chicken shawarma with toum sauce or yoghurt-tahini sauce, Mr Pitta Bread, and your favourite fresh vegetables for a delicious wrap.
