We remember someone suggesting an eggs Benedict bagel and our first reaction was… in a trailer? That just didn’t seem practical.
Even though it’s a popular thing, it felt like one of those ideas that sound better than they actually are when you’re working out of a small kitchen on wheels.

After thinking it through (and a few trial runs with the hollandaise and the eggs), it turns out it is possible. And since bagels aren’t exactly easy to come by in Darwin, we figured we had to give this one a shot before the rain cancels us.

So here’s September’s special, our very own Sunshine Benny: smoked salmon, sunny-side egg, cream cheese and hollandaise on a bagel. Classic. Simple.

A little something on our schedule…

We’ll be closed next weekend (29th & 30th August), so our Ube special has to wrap up a bit earlier than planned.

Tomorrow is the last day to get it.

Ube has arguably been our best special so far and brought a lot of new faces. Really grateful for everyone who’s come through.

When we reopen we’ll be bringing in something new, so there’s that to look forward to.

If you can make it tomorrow, we’d love to see you one more time for the purple goodness 💜

Real talk for tomorrow…

There’s a roadblock on Buscall Ave into Sanctuary Lakes, so the usual way in is shut. You’ll need a couple of extra turns to reach us.

But these bacon egg bagels? Still happening. Still stacked. Still very much worth the detour. Swipe for the proof. We’ll see you soon 🥯

We’ve been quietly wanting to do an ube bagel ever since the matcha one. It just felt like the next thing we had to try, and something we really wanted to share with you guys.

Then last week a family member rocked up and left a few of these weird purple roots on the bench. We passed them off as just purple sweet potatoes and nearly ignored them.

A couple of days later we finally looked them up… and realised we’d been sitting on actual home-grown Ube. Somehow caught the very tail end of the harvest.

That was all the sign we needed.

So here it is, made specially for you, from the ground, through the mixer, and into your hands.

This month’s special: The Cubano Bagel

Tender slow-roasted pork marinated in citrus, garlic & herbs. Honey ham, melty Swiss, crunchy pickles, zippy mustard and a bright herb-citrus kick. All this stacked in a bagel.

Did we need an inspiration? Probably not. We just couldn’t find a Cubano in Darwin, or maybe we had a bunch of limes in the backyard. It’s all big flavour, but surprisingly light and balanced.

Hey everyone, nothing new here, but we didn’t feel like just posting a simpler ‘we’re open’ reminder today.

Here’s what the best sold ones from last week actually look like fresh from the trailer, before we wrap, cut & hand them over to you. The weekend champ 🥓🍳, and the silky smoked 🍣 🥑.

Come swing by this weekend because let’s face it, you’re not flying to New York for that perfect chewy-crisp bite… this’ll do the job right here at Sanctuary Lakes (7:30-11:30am)

And it’s last weekend for the matcha special though, sorry matcha fans! We’ll bring it back in the future but we’ve gotta rotate some new recipes on our small menu. We work in a tight space but still have lotta ammo.

Just some thoughts as we wait for this last batch to proof before putting them in the fridge to sleep.

There was a time we thought this would be easy. But making something from scratch with real quality takes most of the week: mixing, rolling, proofing, baking… all to make sure what we bring on the weekend is as fresh and chewy as possible.

The proofing fridge we got earlier this week beats the domestic one we used by a mile. It is already changing the game. We should be able to keep up better now and reduce those sell outs or waits for the next batch. 🤞

No big complaints, just tired in the best way. It feels damn good doing this, and we are genuinely thankful for these small business problems. They mean people actually want what we are making.

We hope to see you at Sanctuary Lakes this weekend at the usual time. Thanks to the upgrade we made more, though not sure what it will be like with the V8s on. Maybe we will be left with dozens or have nothing at all. For now, good night Darwin ☀️
