If you know สังขยาใบเตย (Sangkaya Bai Toey), you know. 😆

Soft fluffy pandan chiffon, layered with pandan coconut cream and our Thai-style pandan custard.

In Thailand, pandan custard is a much-loved traditional sweet. One of the most nostalgic ways to enjoy it is simply with soft steamed bread — tear off a piece, dip it into the warm, fragrant pandan custard and… that’s childhood right there. 🥹💚

So this cake is my little twist on that familiar flavour — taking something I grew up eating and turning it into a soft, creamy pandan cake.
