I had the pleasure of making a croquembouche for a 40th birthday.

I’d forgotten how long the process takes from making the pastry puffs, filling them with custard cream and coating in toffee before arrange it them in a tower.

I really enjoyed this one and heard the birthday boy had a great celebration.

Honoured to have made this simple vanilla wedding cake.

This 12” round cake with vanilla buttercream had a layer of raspberry coulis in between the layers and was topped with fresh strawberries and raspberries.

A Black Forest birthday cake for a fellow that loves shooting clay targets.
This beauty has layers of cherries soaked in cherry liqueur as well as a cherry drizzle and white chocolate ganache finished off with dark chocolate ganache.
I had lots of fun making edible clay targets and bullets.
