A WARM BUN. BUTTER. CHEESE.

In Denmark, we call it bolle med ost — and this beautifully simple breakfast has become something of a Copenhagen obsession.

The secret isn’t complexity. It’s fresh bread, good butter, and one or two slices of excellent cheese. France has its own version with a crisp baguette and ComtĂ©.

Three ingredients. A little everyday luxury.

BEFORE FARMING, THERE WAS BREAD.

The oldest known bread-like remains discovered so far are about 14,400 years old — made by hunter-gatherers in what is now Jordan, thousands of years before agriculture became established.

That changes the story we usually tell ourselves. We tend to imagine that humans first learned to farm grain, and only then learned to bake bread. The archaeological evidence suggests something more interesting: people may have wanted bread badly enough to gather, grind and prepare wild cereals before they became farmers.

Bread was not simply a product of civilisation.
It may have helped create it.

A small piece of human history, baked into something remarkably familiar.

« AprĂšs le pain, l’éducation est le premier besoin du peuple. » — Danton, 1793

In revolutionary France, bread was not merely food.

Poor harvests, grain shortages and soaring bread prices helped turn economic hardship into popular anger. For many families, bread absorbed most of the household budget. When bread became unaffordable, the consequences became political.

Four years after the Revolution began, Danton put it simply:

After bread, education.

Two centuries later, we still rather like the order.

AIR — The Invisible Ingredient

Earth gives bread grain.
Water gives flour movement.
Fire gives it form.
Air gives it an interior.

The crumb of a loaf is a quiet architecture: tiny chambers created during mixing, expanded through fermentation and fixed by heat.

Wheat and rye shape that space differently. Neither is better. Each bread asks for its own structure.

AIR — the fourth element.

Some ingredients season bread. Caraway locates it.

Its warm, peppery fragrance belongs naturally beside rye. The grain provides depth; caraway lifts it with a faint citrus brightness.

In our Bavarian loaf, sourdough, wholegrain rye and wheat, a touch of honey and aromatic caraway are cold-proofed for 15 hours. The result is not loud. It is exact.

A good loaf does not need a miracle story.

Wholegrain flour retains more of the grain’s natural structure. Seeds can contribute fibre, plant protein, unsaturated fats and minerals. Almonds and walnuts bring their own texture and nutrient profile. Sourdough fermentation changes the dough—but its effects depend on the flour, recipe, fermentation and person.

Our sourdough is naturally leavened and cold-proofed for 15 hours. That is craft, not a cure.

In the new Danish Bakery Journal, we look at what the evidence genuinely supports, where it remains uncertain, and why the nutritional character of bread must always be understood as a complete recipe.

The oven has finished. The loaf has not.

As bread cools, heat continues to leave the centre, moisture redistributes through the crumb and crust, and the structure formed during baking becomes firm enough to cut cleanly.

Open a loaf too soon and the knife can compress its still-delicate crumb. Escaping steam may leave the cut surface looking wetter or gummier than the bread would have become if left intact.

There is no universal waiting time. A smaller wheat sourdough may be ready once it has cooled completely. A large, moist or rye-rich loaf often benefits from several hours—and some dense rye breads are deliberately rested until the following day.

The first cut is therefore not simply a reward for baking. It is the final test of patience.

Not every good loaf is trying to become a cloud.

Wheat bread is often judged by height and large, irregular holes. Rye follows a different structural logic. Its proteins do not build the same elastic, gas-holding network. Instead, starch and water-binding grain components help create a crumb that is closer, moister and more substantial.

That density is not automatically evidence of poor baking. In a properly made rye loaf, it provides character: clean slices, a lasting presence at the table and enough structure to carry an open sandwich without disappearing beneath it.

Dense should not mean wet, gummy or collapsed. It should mean deliberate.

Rye does not imitate white bread. Its beauty begins when we stop asking it to.

EARTH

Organic whole grain flour.
Where bread begins.

Flour is the element of earth — the foundation of every loaf. At Danish Bakery, organic whole grain flour brings the grain’s texture, flavour and character into our sourdough.
