The ‘bread-and-butter’ of baguette baking is time. In order to get an open crumb structure, with the big holes (perfect when you're spreading your butter), you need a slow proofing process.

Our dough is proofed for a minimum of 14 hours, often much longer than that.

Then it's up to you to enjoy it with butter, cheese or the topping of your choice. Which is your favorite?
