Packaging and keeping of Sourdough loaves
A life culture starter is a natural preservative like a lactose fermentation
You do however need to avoid loose moisture when packing

Europe standards tell us not to use plastic for at least 8 hrs after bake (cooling time). Preferably 12 hrs or over night. This prevent an environment for mould spores especially black mould to develop

Before 8 hrs use brown bags, cardboard boxes or wooden bread boxes to avoid drying out

Freezing only pack the loaf in plastic after 12 hr cooling, you can also use foil and plastic to cover the bread. Sourdough bread last for 6 months in a freezer
