I am a Silwood Kitchen Cordon Bleu School of Cooking trained chef, with a 3 year Grande Diploma. I have more than 25 years experience in the catering & restaurant industry. I am not a home baker but a trained professional, I don't bake as a "side line" This is my profession. I only use the best ingredients, butter not margarine, chocolate, canola oil and cream and no premixes are used.
