After taking some time out of the Cherry on Top kitchen for travel and then starting a new job, it was so good to be back in the kitchen, baking special treats for special clients.

These lower carb carrot cupcakes were for return customer Marko, who has missed baked goodies after having to give up sugar and refined grains for his health challenges. I'm so glad he enjoyed them!

Time for another !

Throwback to that time my mixer packed up after making 6 lemons worth of zest sugar, ready to cream it with 675g butter and 1.5kg sugar for a 90 cupcake order 😵‍💫

I can exclusively reveal, the handheld mixer was NOT up to the challenge!

Today in the Cherry on Top kitchen:
Sugar free/Low GI cupcakes for a diabetic friendly birthday celebration!

The low GI cake is made from almond meal, stoneground flour and oat bran; and the vanilla and chocolate icing swirls are Russian buttercream (made with my homemade xylitol condensed milk).

I love being able to make something special for people who haven't had something indulgent for so long, and brighten up their special day 😊

Last week in the Cherry on Top kitchen: low carb cupcakes for Marko, who needs to avoid sugar and refined starch.

Vanilla cupcakes (with coconut and almond flours), topped with xylitol based Russian buttercream; and chocolate almond cupcakes with dark chocolate ganache.

They were a hit with the whole family, and Marko could have an indulgent treat without worrying about the effect on his health.

When your chocolate ganache splits, every AI suggestion to fix it fails, and when you try to make a new batch with the hand mixer you first panic because it's not working, then forget it's still set to "9" when you see it just needs to be plugged in...

I was wiping ganache off cupboard doors and nooks and crannies for days 😅

Yesterday in the Cherry on Top kitchen: prepping for an upcoming low-carb cupcake order.

Homemade sugar-free condensed milk (to use in the icing), and coloured xylitol "sanding sugar" for decorating.
