Cook with Gas: Creamy Tomato Soup & Toasted Cheese

Ingredients:
2 tbsp olive oil
1 onion, finely chopped
2–3 cloves garlic, minced
2 tbsp tomato paste
2 tins chopped tomatoes
1 cup vegetable or chicken stock
1 tsp sugar
½ tsp dried oregano or mixed herbs
Salt & black pepper, to taste
½ cup cream
Fresh basil, optional
Grated parmesan, optional
To serve:
Toasted cheese sandwiches
Crusty bread
Extra basil or parmesan
Method:
Heat olive oil in a pot over medium heat.
Add the onion and cook until soft and fragrant.
Stir in the garlic and tomato paste, then cook for 1–2 minutes.
Add the chopped tomatoes, stock, sugar, herbs, salt and pepper.
Let it simmer gently for 15–20 minutes.
Blend until smooth using a stick blender or normal blender.
Stir in the cream and warm through.
Serve with toasted cheese or crusty bread.
