Easy Hot milk sponge cake with a Blueberry & Cherry butter cream 🍒🥛🍰

Recipe Credit: Snowflake book of baking

Ingredients :
4 eggs
300ml castor sugar
500ml (2cups) Snowflake cake flour
15ml baking powder
250 (1cup) milk
100g butter
5ml vanilla essence

Method:
Beat eggs and sugar together.
Sift flour and baking powder together and fold in egg and sugar mixture.
Heat milk, butter and vanilla essence. Do not boil.
Stir into batter and pour into 2 greaced 20cm cake tins.
I opted to bake in 1 large square tin

Bake in preheated oven at 180° for 25 minutes.
Cool and decorate as desire.

Butter cream Icing

Blueberry compote
125g blueberries
50g chopped cherries
2 Tbs sugar
Juice of a ¼ lemon

Add the above mentioned ingredients to saucepan and cook for 15 minutes on Meduim heat.
Smash blueberries and with fork and allow to cool completely before adding to butter cream

200g salted butter
4 to 5 cups sifted Icing sugar

Beat/ whisk butter until light in colour.
Add icing sugar and blueberry compote 1 Tbs at a time while whisking. Continue to add icing sugar until you get the desired texture.

Allow cake to completely cool before icing and decorating.
Decorate as desired.
