While there were 2 very close guesses they were sadly combinations of flavours so I couldn't accept them as the winning answer.

These are inspired by the Taiwanese pineapple cake and filled with a delightfully tropical pineapple curd center and pineapple cream
Clue: it's a single flavour, the colour is a clue, channeling all the sunshine and summer memories I can into a single bite. One answer is very close. Please note it can't be a combo of flavours to win, even if the main flavour is mentioned, it's just one flavour.
