Kimchi and sauerkraut are busy bubbling side by side in my kitchen! Two different culinary traditions from the opposite sides of the world, but both are super foods, created during lactofermentation. In this process, good bacteria metabolizes carbohydrates in vegetables into lactic acid, giving them sour flavor, preserving them and making them safe to eat. It's not only delicious, but incredibly beneficial, providing probiotics, vitamins and minerals 👌😋

What an amazing time we've had at Soldato Cafe yesterday! I would like to thank Elmien and Hugo for hosting the venue and the most wonderful guests for making it happen. It was such a pleasure to cook for you guys and share some of my Polish traditions with you. Christmas in July! It was a fracture of what Christmas is all about, but it was definitely a reminder, that great food, family and friends is something we all want to experience all year round❤️
