My First Attempt at an Entremet Cake 😁 which is a layered mousse cake. In this one I layered the following:

White Chocolate Mousse
Kiwi Mint Compote
Nutmeg Sponge Cake
Fresh Raspberry Lime Jelly
Coconut Vanilla Crémeux
Peanut Sable Breton
covered with a mirror glaze and modeling chocolate shark for decoration 🦈

Vanilla sponge layered with a Sun Kiwi Cream Cheese filling and Passionfruit curd.
Covered with vanilla buttercream icing and decorated with sugar crystals, chocolate covered peanuts and chocolate buttercream.

Piping is also done in vienna Cream

Large Square double layer moist sponge cake. Layers are sandwiched using white Vienna Cream Icing.
The sides of the cake are piped with rich chocolate Vienna cream spikes before the top of the cake is filled with chocolate gouache
