2025 Suidkus Sauvignon Blanc
Crafted in a seductive old-world hyper-oxidative style, this Sauvignon Blanc whispers of forbidden indulgence—and perhaps a touch of winemaker's mischief. The grapes, plucked at peak ripeness to banish any hint of unripe green notes, were gently destemmed—sans sulfur or any antioxidant guardians—and pressed with abandon, as if daring the air to join the party. The luscious juice was then pumped skyward to a circulating valve atop a towering stainless steel fermentation vessel, where it cascaded down in a misty spray, greedily absorbing every molecule of oxygen until saturated in its embrace. This ritual darkened the elixir to a sultry brown, nearly black, testing the winemaker's very resolve (and maybe his faith in alchemy).
Left to its wild desires in the tank, nestled on its gross lees with no additions, the juice ignited a spontaneous fermentation fueled by ambient feral yeasts—no temperature reins to tame the heat, because who needs control when nature's throwing a rave? Robust grapes and abundant oxygen sparked a fervent, warm surge. As the passion subsided, cooling jackets were engaged, and sulfur whispered in to halt any malolactic dalliance, lest things get too rowdy.
Post-fermentation, a miraculous metamorphosis unfolded: from shadowy depths to a radiant golden-green glow, like a Cinderella story for juice. The wine settled languidly before being racked off the lees into a majestic 3000L Hungarian oak foudre, where 20% base wine from the Suidkus Sparkling Sauvignon Blanc—harvested at 19° Balling and vinified with classic finesse—mingled in, lending structure and intoxicating aromatics, because every great blend needs a sparkling sidekick.
Matured for nine sultry months in foudre, it was then finessed with bentonite, racked, and lightly filtered before bottling. This oxidative alchemy strips away delicate flavonoids, birthing an unconventional Sauvignon Blanc: neutral in its youthful vigor, yet teasing with notes of white pear and orchard blossom, finishing with a waxy, phenolic caress that promises evolution for years in the bottle—aging gracefully, unlike some of us.
Savor it now for its fresh allure, but let it peak in two years from vintage. Serve chilled to icy perfection alongside briny seafood or spice-kissed white meats—where its elegance will seduce every sense, and maybe even spark a chuckle.
