As promised, here is my ginger biscuit recipe.
You'll need:
2 cups of flour
150g room temp margarine
1/3 cup brown sugar
60ml golden syrup
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
3 tsp ginger
Pinch of salt
Method :
Mix flour, baking powder and spices in bowl, then set aside. (always sieve flour before mixing it with the spices)
On another bowl, add margarine and sugar. Mix till all comes together, add golden syrup and mix.
Add the spiced flour mixture, and mix till all gets mixed up( dough must not stick to your hands when touched)
Transfer dough on to a lightly dusted flat surface, roll to 1cm thickness. Using a fork, scrape the dough to make the rustic look on top(we do this method with the romany creams aswell). Use a cookie cutter and cut into desired shapes. For the plain looking cookies, you can roll them into equal balls, then with the palm of your hands, flatten the dough.
Transfer to baking pan(do not grease the pan! use patchment paper🙌
Bake in a preheated oven if 180°c for 12-15 minute /until golden brown.
Leave cookies in the tray for 5-10 minute in the baking tray, then allow to cool on a cooling rack.
THEY TASTE EVEN BETTER THE NEXT DAY! CRUNCHY!
