I love baking sourdough bread. Every bake is an opportunity to improve and learn more about how your dough reacts - to the cold, heat, humidity - it all makes a difference to your bread. Your starter (fermented yeast) is no different. If not fed correctly, cared for and even loved, you could end up with an acidic starter, which easily spells disaster for your next bake...

So happy with the results of last night's bread.
