🤍 A year in the making

I've been quiet for a while… but I haven't been still.

For the past year, I've been working on something very special to me: our Flan Parisien.

And this one has a little more of a story behind it.

There were so many versions. So many little things that needed changing. Moments when I thought “surely, this is it”… only to have someone tell me, “No… you can do better.”

And I am incredibly grateful for that.

Especially to my husband, who has probably been my harshest critic and my biggest believer at the same time. 😂❤️

He saw what I was capable of before I fully saw it myself. He never wanted me to simply put something out there because it looked beautiful. He wanted me to put out something that was truly worthy of my name.

And then there were my children, my husband's colleague, and everyone who tasted version after version and gave me their honest opinions.

Sometimes I didn't want to hear the criticism. 😅
But I needed it.

Because without them, I might have launched this much sooner… but it wouldn't be what it is today.

So this flan isn't just the result of a recipe.

It's the result of a year of testing, learning, failing, listening, improving and trying again.

And finally, I feel ready to share it.

A delicate pastry, a silky vanilla custard and that deeply caramelised top — simple, refined and made with a whole lot of patience.
