Eierlose-sjokolade-en-koffiekoek

LEWER 1 KOEK (16 SNYE)
Bereiding: 10 minute
Baktyd: 50 minute
KOEK
125 g margarien, gesmelt
15 ml (1 e) witasyn
400 ml water
100 ml sterk koffie
10 ml (2 t) vanieljegeursel
750 ml (3 k) bruismeel
5 ml (1 t) koeksoda
80 ml (¹⁄³ k) kakao
5 ml (1 t) sout
375 ml (1½ k) suiker
VERSIERSEL
60 ml (¼ k) margarien
30 ml (2 e) melk
5 ml (1 t) koffiepoeier
2 ml (½ t) vanieljegeursel
375 ml (1½ k) versiersuiker
15 ml (1 e) kakao
Flake-sjokolade vir versiering
Voorverhit die oond tot 180 °C.
Smeer ’n koekpan van 20 cm en bestrooi met meel.
1. KOEK Klits die margarien,asyn, water en koffie saam. Voeg die vanieljegeursel by.
2. Sif die droë bestanddele saam en meng die suiker deur. Voeg die nat bestanddele by die droë bestanddele en meng goed tot glad.
3. Giet in die pan, maak gelyk en bak sowat 50 minute.
4. Laat effens afkoel en keer uit op ’n draadrak.
5. VERSIERSEL Smelt die margarien en melk en voeg die koffie en geursel by. Sif die suiker en kakao by en meng goed tot glad. Smeer oor die koek en versier met die Flake.

2 RESEPTE VIR 'N JOGHURT TERT

Marshmallow and Yogurt Tart

200g Tennis biscuits
60ml Butter
One large bag of Marshmallows (140g)
One 500g pot of Yogurt

Pre-heat the oven to 180°C.

Crush the biscuits and melt the butter.
Mix the biscuits and butter and squish into a tart tin.
Bake for 10 minutes and set to one side.

Place the marshmallows in a heat-proof bowl and microwave for 30 second blasts until marshmallows are very well melted.
Use a BIG bowl as the marshmallows expand a lot. And make very sure they are properly melted otherwise your tart won’t set as well and it will have marshmallow bits in it.

When the marshmallows are completely melted, scrape in the tub of yogurt and mix thoroughly. If you realize that the marshmallows hadn’t completely melted after all, return the whole mix to the microwave and heat in 15 second blasts, stirring in between, until just melted. Be careful not to boil the yogurt, though.
Pour into the tart tin and place in the fridge for a couple of hours.

STRAWBERRY YOGHURT TART: [Recipe from Talana Kluits]
Serves 8

½ x 200 g packet Marie biscuits
2 tbsp (30 ml) soft tub margarine, melted
1 x 80 g packet strawberry jelly powder
300 ml strawberry flavoured low-fat yoghurt
1 x 250 g tub plain smooth low-fat cottage cheese

WHAT TO DO:
1.Place biscuits in a plastic bag and crush with a rolling pin or a small glass.
2.Mix biscuit crumbs with margarine. Press onto the base of a tart dish.
3.Dissolve the jelly powder with ½ cup boiling water and allow to cool, but not set.
4.Mix yoghurt and cottage cheese and stir into the cooled jelly.
5.Pour over biscuit crumbs and refrigerate for 3 hours or overnight.
6.Serve cold with fresh fruit.
