’n Maklike, vars slaai wat altyd ’n treffer is – perfek vir braai, kuier of sommer net langs enige ete. Romerig, geurig en propvol smaak 😋

🧺 BESTANDDELE

• 1 kg gevriesde pitmielies
• 1 selderystingel, fyn opgekap
• 1 ui, fyn opgekap
• Pietersielie, fyn opgekap (na smaak)
• 1 koppie cheddarkaas, in klein blokkies gesny
• Mayonnaise (na behoefte)

👩🏻‍🍳 METODE
1. Stoom die pitmielies gaar in ’n bietjie soutwater.
2. Dreineer goed en laat heeltemal afkoel.
3. Voeg die mielies, seldery, ui, pietersielie en kaas saam in ’n groot mengbak.
4. Meng alles liggies deur.
5. Voeg nou die mayonnaise bietjie vir bietjie by tot die slaai lekker romerig is, maar nie pap nie.
6. Proe en pas sout of peper aan indien nodig.
7. Verkoel voor opdiening vir die beste smaak.

500 gr maalvleis,
1 groot gebraaide ui OF 1 rou gerasperde ui
2 snye geweekte brood in melk (uitgedruk) of 2 aartappels grof gerasper

MAYO CURRY PASTA SALAD

This can be made the day before.

INGREDIENTS
1 pkt pasta cooked and cooled
1 cup mayonnaise
1/2 cup milk
1 or 2 teaspoon curry powder
1 cup cheese cubes
1 green pepper chopped
1 onion chopped
2 teaspoons dried parsley

INSTRUCTIONS
Place cooled pasta in a large salad bowl with the cheese cubes, green pepper and onion.
Mix the mayonnaise and curry powder together with the milk in another bowl or jug.
Once mixed pour over paste and gently mix making sure to coat the pasta.
Sprinkle with the dried parsley and place in the fridge under ready to serve.

LAMB RIB/STAAN RIB TIPS
So heres a few pointers on doing Lamb rib or as its called in Afrikaans "staan rib".

Now first things first you may be asking why its called "staan rib"? Well in a nutshell, because usually its placed in a hand held folding grid and then placed vertically either at 45 or 90 degrees to a fire hence "staan" means "standing" because the rib stands next to a fire or coals.

Now with that out the way, here's some tips:
1. Ensure to buy a decent rib for best results.
2. Maintain the coals, remember this is a long process anything of 1 to 5hrs.
3. Ensure at all times to maintain a medium to low heat, this is the key to achieving the goal.
4. If marinating ensure to constantly baste with the marinade throughout the process for best results.
5. Judge how far away to place the grid from the fire by simply holding your hand next to the fire, if you can count to 10 that's where you want to be.
6. Start with the fat side facing the fire.
7. Do turn occasionally but remember you want a 70/30 ratio meaning 70% of the time the fat side towards the heat and 30% of the time the underside towards the heat.
8. Once the meat has retracted about 1 to 2cm from the bone and you can see the bone tips clearly then your done.

NOTE:
1. Lastly there are grid holding frames out there for doing this, not a must but just makes the job a little easier.

KOREAN CHICKEN WING MARINADE

INGREDIENTS
10 chicken wings cut in half
6 tabelspoons soy sauce
2 tabelspoons sesame oil
1 tablespoon sesame seeds
3 tabelspoons honey
3 tabelspoons sugar
½ small onion grated
5 cloves garlic grated
1 tabelspoon red pepper paste
1 chilie chopped and seeds removed

INSTRUCTIONS
Mix all the ingredients except the chicken in a bowl.
Add the chicken pieces and mix until all pieces are fully coated.
Place in the fridge for 4 hours to marinade.
Take the chicken wings out of the marinade mixture and braai over medium coals.
Set aside the leftover marinade in a heatproof dish or roasting pan.
Once the chicken is done place into the dish or roasting pan with the left over marinade and keep warm over low coals mixing occasionally to coat in the marinade.

BASIC ROOSTERKOEK, DUMPLINGS AND STICK BREAD RECIPE

INGREDIENTS
1 kg cake flour
1 pkt instant yeast
15 ml salt
600 ml lukewarm water
(might need a bit more or less)

INSTRUCTIONS
Place the cake flour, yeast and salt in a bowl.
Knead in enough lukewarm water to form a stiff dough.
Place in a warm place to rise double in size.
Knead down again.
Break off dough balls and press out a bit to make a square for roosterkoek.
Roll into balls for dumplings and place in the pot.
Cut strips to wrap around sticks for stick bread.
Place the roosterkoek or stick bread on low coals to cook.
When done serve hot with butter.

EASY DUMPLINGS FOR POTJIE

INGREDIENTS
500 ml cake flour
15 ml baking powder
5 ml salt
80 ml chopped parsley
30 ml cooking oil
2 eggs
125 ml milk

INSTRUCTIONS
Sift together the cake flour, baking powder and salt together. Add the chopped parsley.
Whisk the oil, eggs, and milk together in a separate bowl.
Pour the milk mixture into the flour and mix until smooth.
Drop spoonful’s of the sticky batter onto the stew.
Cover the pot and allow dumplings to cook for 10 minutes.
When dumplings are ready they will have doubled in size and will be springy to touch.

STICKY CHICKEN

INGREDIENTS
15 to 20 chicken wings or drumsticks
½ cup lemon juice
½ cup soya sauce
¼ cup melted jam of your choice apricot works the best
¼ cup chutney
¼ cup tomato sauce
3 garlic cloves chopped fine
1 onion chopped
5 ml mixed herbs

INSTRUCTIONS
Place wings or drumsticks in a bowl.
Mix all the sauce ingredients together and pour over chicken.
Marinade for an hour.
Braai over medium coals while basting with the left over marinade.

Roasted sesame seeds can also be sprinkled over.

Maklike Bierbroodjie

Wat jy benodig:

500 g bruismeel
30 ml suiker
5 ml sout
5 ml gemengde kruie
1 blikkie of botteltjie bier (340 ml)
1 koppie gerasperde kaas

So maak jy:

Verhit die oond tot 180C.

Smeer n middelslag-broodpan met botter.

Meng die bruismeel, suiker, sout en kruie saam.

Meng gerasperde kaas by. (Los bietjie kaas vir bo-op die broodjie)

Voeg die bier by en meng totdat n sagte deeg gevorm het.

Plaas dit in die pan en maak dit gelyk.

Bak die brood vir 50 minute lank tot gaar.

(Sprinkel kaas bo-oor so 10min voor jy hom uithaal)

Geniet louwarm met botter.

Varkbraai (Pork Barbecue)

Bestanddele:

Vir die Marinade:

1 kg varkskouer, in 2,5 cm blokkies gesny

125 ml sojasous

60 ml pynappelsap

60 ml wit asyn

60 ml bruinsuiker

2 knoffelhuisies, fyngekap

1 teelepel swartpeper

½ teelepel sout

¼ teelepel gemmerpoeier (opsioneel)

Vir die Braai:

Bamboes stokkies (week vir minstens 30 minute in water om te keer dat dit brand)

Bietjie kookolie of botter

Metode:

Marineer die vark:
Meng al die marinade-bestanddele in ’n groot bak. Voeg die varkblokkies by en meng goed sodat alles bedek is. Bedek en plaas in die yskas vir minstens 4 uur, verkieslik oornag vir die beste geur.

Ryg op stokkies:
Ryg die gemarineerde vark op die geweekte bamboes stokkies. Los ’n bietjie spasie tussen stukke sodat dit eweredig gaar word.

Braai die vark:
Verhit jou rooster (gas of houtskool) tot medium-hoë hitte. Smeer die roosterrakke liggies met olie om vassit te keer. Braai die stokkies, draai gereeld, tot die vark gaar en effens geskarrel is – sowat 10–15 minute. Smeer tydens braai met ekstra marinade vir ’n lekker g***s.

Bedien:
Bedien warm met jou gunsteling doopsous, soos sojasous met bietjie brandrissie, asyn en knoffel.

Wenke vir sukses:

Marineer langer: Hoe langer die vleis in die marinade lê, hoe meer trek die geur in.

Spasie op die rooster: Moenie die rooster oorlaai nie, anders kook dit ongelyk.

Gaarheid: Gebruik ’n vleistermometer – die binnetemperatuur moet minstens 63°C wees vir veiligheid.
