Flu fighting foods with Carb Clever Cauliflower Noodles from
This spicy aromatic chicken Noodle stir fry is super delicious and so easy to make.
Ingredients
2 Tbs coconut oil
1 small onion sliced
2 cloves garlic minced
1 thumb size ginger grated
2 chicken breast sliced in bite size
2 carrarots sliced
2 cups of cauliflower florets
2 cups baby spinach
1tsp driedchilli flakes
1tsp ground cumin
1tsp fresh tumeric root finely grated
pinch of cayenne pepper
1 cup bone broth/ shop bought stock
Salt and pepper to taste
Method
Heat oil in a large skillet or work
Season chicken and add to hot oil together with onions, driedchilli flakes, cumin, fresh tumeric and a good pinch of cayenne pepper.
Sirfry till chicken is golden and spices are cooked out.
Remove from pan. Set aside.
Add carrots, cauliflower, garlic and ginger and stir fry for 5 min. Degalze with bone broth and allow to simmer till vegatables are cooked but still crunchy.
Place chicken back with all the bits of spices and stir through.
Add cauliflower Noodles and spinach. Season to taste and stir through one final time.
Tip: I squeezed over some lemon for extra zing 😉
Nb: I use a cup of bone broth to coat my noodles in a flavoursome sauce as I don't use any condiments😎
