Thin bases are pre-baked in a wood burning oven.

Shelf life 3 months from production.

Delectable!!
Crayfish thermidor recipe:
10 crayfish tails
25g butter
2 large shallots/ red onion , finely chopped
400ml Fish stock
50ml Dry white wine
250ml double cream
1 cup grated gouda cheese
Β½ tsp English mustard/ Dijon Mustard
1 tsp chopped herbs (chives, parsley, and tarragon) You can use dry herbs.
2 fresh spring onions (julienned)
Cayenne pepper/ Chilli flakes to taste
1 tsp lemon juice/ Zest from lemon
Salt and freshly ground black pepper
15g finely grated Parmesan cheese.(optional)
Method:
Place tails in boiling water for 3 min remove and place in bowl with cold ice water.
Once cooled remove meat and slice in cubes.
For the sauce, melt the butter in a small pan. Add the shallots/ Red onion and cook gently for 3–4 minutes until soft but not browned. Add the fish stock, white wine and half the double cream and boil until reduced a bit . Add the rest of the cream , gouda, and simmer until it has reduced to a good coating-sauce consistency. Add the mustard, herbs , cayenne pepper/ chilli flakes , zest, and lemon juice. Season to taste.
Add Crayfish meat to the sauce , mix through and spoon into the empty shells. Sprinkle the parmesan over
Preheat the grill to high. Sprinkle lightly with Parmesan cheese. Grill for 3–5 minutes until golden and bubbling. Remove from grill and add the finely julienned spring onions.
