Simple potato dish

All you need is a few potatoes washed, peeled and diced
mixed vegies
Onion
Garlic
Tomatoe
fresh parsley
Tomatoe paste
Salt and pepper
Spices of your choice
and a stock cube
In a pot boil potatoes briefly
* Add oil in pan and put on medium heat
* Add onions, fry a bit then add finely chopped garlic and fry
*Add mixed vegies
* Add salt, pepper and spices
* Add tomatoes, mix and cover for about 2 minutes
* Add 1 tsp tomato paste and mix then add a dissolved stock cube,add boiled potatoes and simmer for 5 minutes
Lastly sprinkle finely chopped parsley

Soft Banana bread recipe

Ingredients

700g flour
2 large ripe bananas
2 eggs
60g sugar
2 tsp salt
10g yeast
80g butter
2 Tbs powdered milk
140ml luke warm milk

Method

1. In a small bowl mash bananas and set aside
2. In a jar put eggs and milk and lightly beat
3. In a large bowl mix all dry ingredients including yeast and whisk
4. To the dry ingredients and the mashed banana, then egg mixture and mix well with a spatula, then add butter and mix well
5. Turn on a floured surface and knead until a smooth elastic dough is formed, put in a bowl and cover with plastic wrap and let it rise in a warm place for an hour
6. Knead again and divide the dough into 4 equal parts if you're using the banana loaf tin
7. shape into balls, cover with plastic and let it rest for 15minutes
8. With rolling pin flaten the dough and roll it into a long strip, the size of your baking tin.
9. cut the dough into equal pieces and place into the tins packed closely, cover again and let it rise for an hour
10. Bake at 180⁰C for 15 minutes

Scones recipe

Ingredients
3½ cups plain flour
2 Tbsp sugar
1½ Tbsp baking powder
½ tsp salt
1 cup butter milk
180g butter
1 small egg + 1 more for brushing

Method
1. Preheat oven to 190⁰C and grease or line baking sheet
2. in a large bowl put all dry ingredients and whisk
3. in a separate bowl break an egg and beat lightly adding in the butter milk gradually and set aside
4. grate the butter and rub in the flour mixture untill it looks like bread crumbs
5. Add the milk and egg mixture and mix until a sticky dough is formed.
6. turn dough on a floured surface
7. Dust your hands with flour and pat the dough into an inch thick and cut using a cookie cutter or tumbler
8. Place on to the lined baking sheet, glaze with egg wash and bake for 12 to 15 minutes.

Dinner Rolls recipe

Ingredients

2½ cups bread flour
2½ tablespoons sugar
1 teaspoon instant yeast
1¼ teaspoon salt
3½ tablespoons melted butter
150ml luke warm milk
1 egg

Method
1. In a bowl put milk, add sugar, yeast, butter and egg and mix a bit
2. Add salt and mix to combine
3. Add half of the flour and mix with a wooden spoon
4. Add remaining flour and mix until all is incorporated
5. Put mixture on lightly floured surface and kneed until the dough is elastic and doesn't stick on your fingers.
6. Divide the dough into 12 equal portions and shape into rounds and place on a greased or lined baking sheet leaving enough space for rising
7. cover with plastic wrap and let them rise for an hour
8. Bake at 190⁰C for about 15 minutes
