*GOLDEN APRICOT JAM PUFF TARTS πŸ‘βœ¨ Just 4 ingredients!*

So flaky, so glossy, so easy - looks like bakery bought!

*What you need:*
Puff pastry 400g, 1/2 cup apricot jam, 1 egg, flaked almonds

*How:*
1. Cut pastry into 8 squares. Score a border inside.
2. Prick middle, brush edge with egg.
3. Spoon 1 tsp apricot jam in centre (don't overfill!)
4. Sprinkle almonds & sugar on edge.
5. Bake at 200Β°C for 15 mins till puffed & golden.
6. Brush warm jam glaze on top. Dust icing sugar.

Pro tip: Warm your jam first - it goes glossy and smooth!

Easy, soft blueberry cake - my go-to one:

*Simple Blueberry Cake (one 20cm / 8-inch cake)*

*Ingredients:*
- 1 1/2 cups (190g) flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (115g) soft butter
- 3/4 cup (150g) sugar
- 2 large eggs
- 1 tsp vanilla
- 1/2 cup (120ml) milk
- 1 1/4 cups (190g) blueberries, fresh or frozen
- 1 tbsp flour to coat berries

*Method:*
1. Heat oven to 180C / 350F. Butter and line a 20cm cake tin.
2. Mix flour, baking powder, salt in a bowl.
3. In another bowl, beat butter + sugar until light, about 3 mins.
4. Add eggs one by one, then vanilla.
5. Add half the flour mix, half the milk, then repeat. Don't overmix.
6. Toss blueberries with 1 tbsp flour (stops them sinking). Fold gently into batter.
7. Pour in tin, scatter a few extra berries on top.
8. Bake 40-45 mins until a skewer comes out clean.
9. Cool 10 mins in tin, then on rack.

*Optional quick lemon glaze:*
Mix 1/2 cup icing sugar + 1 tbsp lemon juice and drizzle on top.

*Tips:*
- If using frozen berries, don't defrost them.
- For extra moisture, add 2 tbsp yoghurt or sour cream.
- Keeps 3 days covered, or freezes well

Here's a soft, fluffy cinnamon rolls recipe that never fails - makes 12 large rolls:

*Dough:*
- 3 1/2 cups all-purpose flour (440g)
- 1/4 cup sugar (50g)
- 1 packet instant yeast (10g / 2 1/4 tsp)
- 1/2 tsp salt
- 3/4 cup warm milk (180ml)
- 1/4 cup melted butter (60g)
- 1 egg

*Filling:*
- 1/3 cup soft butter (75g)
- 3/4 cup brown sugar (150g)
- 2 1/2 Tbsp cinnamon
- Pinch nutmeg (optional)

*Glaze:*
- 120g cream cheese, soft
- 2 Tbsp butter, soft
- 3/4 cup icing sugar
- 2-3 Tbsp milk
- 1 tsp vanilla

*Method:*

1. *Dough:* Mix flour, sugar, yeast, salt. Add warm milk, melted butter and egg. Mix then knead 7-8 mins until smooth. Cover and let rise 1 hour until double.
2. *Roll:* Roll dough into a 40x30cm rectangle. Spread soft butter all over. Mix brown sugar + cinnamon and sprinkle evenly.
3. *Cut:* Roll up tightly from the long side. Cut into 12 rolls with a sharp knife or string.
4. *Second rise:* Place in greased baking tray, close together. Cover 30-40 mins until puffy.
5. *Bake:* 180Β°C for 20-25 mins until golden. Don't overbake.
6. *Glaze:* Beat cream cheese, butter, icing sugar, vanilla and milk. Spread over warm rolls.

*Tips:*
- Milk must be warm, not hot.
- For extra soft rolls, pour 1/2 cup warm cream over the rolls just before baking.
- Best eaten warm.

*8 Fluffy Scones - Small Batch*

*Ingredients:*
- 2 cups self-raising flour (250g)
- 2 Tbsp sugar
- 50g cold butter / Rama, cubed
- 1 egg
- 3/4 cup milk (180ml)
- 1/2 tsp vanilla essence
- Pinch of salt

*Method:*
1. Heat oven to 180Β°C. Lightly flour a tray.
2. Mix flour, sugar, salt. Rub in butter until crumbly.
3. Beat egg, milk and vanilla in a cup. Keep 1 Tbsp aside to brush tops.
4. Pour wet into dry and mix gently with a fork. Don't knead hard β€” just bring together.
5. Pat dough 2.5cm thick on floured surface. Cut 8 rounds.
6. Place close together so they rise up, not sideways. Brush tops with milk mix.
7. Bake 15-18 mins until golden on top.
