There’s something truly special about sourdough — the crackling crust, the open crumb, and the deep flavour that only time and patience can create.

Join us at The Culinary Loft for a two-day, hands-on sourdough experience with guest baker Juan Nel. You’ll work with his mother starter, Betsy, as he guides you through mixing, stretching, folding, shaping and baking your own beautiful artisan loaf.

We’ve also added a few thoughtful extras to make the experience even more special. A light lunch is included, creating a relaxed space to learn, bake and enjoy good food together.

TRIPLE CHOCOLATE BANANA BREAD

1½ cups flour
½ cup cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
½ cup butter
¼ cup brown sugar
½ cup white sugar
2 eggs
4 small bananas, mashed (approx. 1⅓ cups)
½ cup chocolate chips

TOPPING:
¼ cup half & half. (volroom melk)
2 tablespoons brown sugar, packed
1 teaspoon butter
½ teaspoon vanilla
6 tablespoons chocolate chips

Preheat oven to 180° C. Grease & flour a 9×5 loaf pan.
Combine flour, cocoa powder, baking soda and baking powder in a large bowl. Set aside.
Cream butter and sugars together until fluffy. Stir in eggs and bananas. Add banana mixture and chocolate chips to flour mixture. Stir just until combined.
Bake 50-60 minutes, or until a toothpick comes out clean.
Topping
Heat half & half and brown sugar over medium heat until brown sugar has dissolved and tiny bubbles start to form on the edges. Stir in vanilla and butter until melted and turn off heat. Add chocolate chips and do not stir, let sit 2-3 minutes.
Whisk chocolate chips until smooth.
Cool completely and drizzle over bread.

Peanut Butter Bars | No Bake
Ingredients
3/4 cup peanut butter
3/4 cup melted butter 180ml
2 cups Marie biscuits (crushed into crumbs)
1 cup icing sugar
1 tsp vanilla essence
1 cup chopped chocolate

Instructions
1. In a large bowl add the melted butter , icing sugar, peanut butter , vanilla . Beat until it’s well mixed and creamy.

2. Add the crushed biscuits. Mix until all the ingredients are well combined.

3. Transfer the mixture into a baking pan lined with parchment paper. Level the mixture with a spoon or spatula.

4. In a small bowl add chocolate and 1 tsp butter.
Melt the chocolate and butter in a microwave or over simmering water.
Pour the melted chocolate on top of the mixture.

5. Keep in the refrigerator for 2 hours or until the chocolate has completely set . Then cut into equal squares.

Note ❗️: *You can also use digestive biscuits , graham crackers or any crunchy biscuits. NO soft biscuits.

* Use any chocolate of your choice : milk chocolate, dark chocolate, choc chips etc.

* When you melt chocolate over simmering water make sure the bowl you are using does not come in contact with the water.

Coconut drops
Ingredients
2 cups cake flour
1 cup desiccated coconut
1/2 cup sugar (white or brown)
1/2 cup butter or margarine 113g (room temp)
1/3 cup buttermilk or coconut milk 80ml
1 egg
1 & 1/2 tsp baking powder
1 tsp vanilla essence
1/4 tsp salt

Instructions
1. In a large bowl sift in flour, baking powder and salt. Add sugar then whisk well.

2. Add butter then rub it with your fingers until you get a crumbly mixture. Then add coconut and mix together.

3. In a small bowl mix buttermilk, vanilla and egg. Then pour this mixture to the flour mixture.
Mix until the wet and dry ingredients are well combined.

4. Use a tablespoon or ice cream scoop to scoop out the dough and place in a prepared baking tray. DON’T SHAPE THE DOUGH!

5. Bake in a preheated oven at 185 Degrees Celsius for 20 minutes or until slightly golden brown.

Note ❗️: If you are outside SA 🇿🇦 and Botswana 🇧🇼, you can use All purpose flour.

Chocolate loaf
Ingredients
1 cup cake flour
1 cup white sugar
1/2 cup milk (125ml)
1/2 cup melted butter
2 eggs
5 Tbsp cocoa powder
1 tsp baking powder
1 tsp vanilla essence
2 tsp coffee powder
1/4 tsp salt


Note : You can use all purpose flour instead of cake flour .

Instructions
1. In a large bowl add the melted butter and sugar . Mix well .

2. Add vanilla and mix in one egg at a time . Then add milk , gently mix .

3. Sift in flour, cocoa powder, coffee powder, salt , baking powder.
Mix gently until the wet and dry ingredients are well combined.

4. Pour the batter ( mixture) in a prepared loaf tin.

5. Bake in a preheated oven at 180 Degrees for 30 minutes.

OPTIONAL: Chocolate glaze
1/2 cup chopped chocolate
2 Tbsp milk
Add the chocolate and milk in a small bowl . Let it melt over boiling water or in a microwave. Mix until you get a smooth and thick consistency.

Jam tarts
Ingredients
2 cups cake flour
1/4 cup white sugar
1/2 cup softened butter or margarine
1 egg
1/4 cup desiccated coconut
1 & 1/2 tsp baking powder
1 tsp vanilla essence
1/4 tsp salt
1/2 cup jam (any flavour )

Instructions
1. In a large bowl cream butter and sugar until light and fluffy. Add vanilla and egg then mix well.

2.Sift in flour, baking powder, salt . Add coconut then mix until all the ingredients are well combined.

3.Scoop out 1/2 cup of the dough. Form the dough into a ball , flatten it a little then cover it with a plastic or cling wrap. Keep it in the freezer for 20 minutes to firm up.

4.Take the remaining dough and spread it in a prepared baking tray. Use a spatula or spoon to press it down .

5.Spread the jam on top of the dough.

6.When the dough in the freezer is firm . Grate it directly on the baking tray that has the jam and dough mixture.
Make sure the grated dough completely covers the jam .

7.Bake in a preheated oven at 180 Degrees Celsius for 20 minutes or until golden brown on top .

Cut it into equal squares.

Note ❗️: For a bigger batch double the ingredients.
