Some starter ratio guidance for anyone just getting familiar with sourdough
A while back I touched briefly on sourdough starter feeding ratios, and the questions that followed told me the subject needed a much more thorough treatment. So this post is that treatment. Everything you need to understand about feeding ratios, what they mean, why they matter, how each one behaves, and how to choose the right one for where you are in your sourdough journey.

Let's start with what feeding ratios actually mean.
A feeding ratio is simply a shorthand way of expressing how much starter, flour, and water you're combining when you feed. The three numbers always follow the same order: starter, flour, water. So a 1:2:2 means one part starter, two parts flour, two parts water. If you start with 20g of starter, you add 40g of flour and 40g of water.
Everything is measured by weight, not volume. This is why a kitchen scale matters so much in sourdough. Volume measurements like cups and spoons vary depending on how loosely or tightly you pack them. Weight is always consistent, and consistency is what builds a predictable starter.

Why the ratio you choose matters more than most people realise.
The feeding ratio controls four things simultaneously: how fast your starter ferments, how strong it becomes over time, how tangy or mild the flavour of your bread ends up, and how frequently you need to feed it. Think of it like a meal plan. A small feeding is a quick snack that gets consumed fast. A large feeding is a full meal that takes much longer to work through. Neither is wrong. They just produce different outcomes, and understanding those outcomes is how you take control of your baking schedule instead of being controlled by it.

Now let's go through each ratio properly.
2:1:1 — The new starter ratio
This is the one most beginners never hear about, and it's also the one that can make the difference between a starter that develops successfully and one that gets thrown away too early out of frustration.
When you're building a starter from scratch, the culture inside the jar is young, fragile, and still establishing itself. The wild yeast population is small and unstable. If you feed it with too much fresh flour and water at this stage, you dilute the fledgling colony before it has had a chance to grow strong enough to handle a larger feeding. The result is a sluggish, inconsistent starter that takes far longer to develop, and that extended, discouraging timeline is one of the main reasons beginners give up.
A 2:1:1 ratio, more starter than fresh flour and water, keeps the existing culture concentrated enough to develop without being overwhelmed. It is a deliberately conservative approach designed specifically for the early days of building a starter from scratch, not for maintaining an established one. Once your starter is consistently doubling, smelling pleasantly tangy, and behaving predictably after every feed, you graduate out of this ratio and into a maintenance ratio.

1:1:1 — Fast and active
Equal parts starter, flour, and water. Because the amount of active yeast and bacteria relative to fresh flour is high, fermentation moves quickly. At a typical room temperature of around 21 to 24°C, a 1:1:1 feeding usually peaks within 4 to 6 hours. This makes it well suited for bakers who bake daily or need their starter ready within a short window. The trade-off is that it exhausts itself quickly and needs feeding more frequently to stay balanced. It also tends to produce a more pronounced tang over time because of the faster acid buildup.

1:2:2 — Active but with more breathing room
One part starter to two parts flour and two parts water. Still fairly active but with a slightly longer runway than 1:1:1. The extra fresh flour gives the culture a little more to work through before it peaks, which means you get more flexibility in your timing without sacrificing much in the way of activity. A solid everyday feeding ratio for bakers who are active in the kitchen and want a starter that's reliably ready without being on a tight clock.

1:3:3 — The middle ground
One part starter to three parts flour and three parts water. This ratio produces a steady, moderate pace of fermentation and is one of the most widely recommended for regular maintenance. At room temperature, expect the starter to peak somewhere between 6 and 8 hours depending on your kitchen temperature and flour type. It's a good fit for bakers who bake every other day, giving enough time between feedings without the starter becoming overly acidic before the next feed.

1:5:5 — Slower and milder
One part starter to five parts flour and five parts water. Now you're significantly stretching the time between peak and collapse, which gives you much more flexibility in your schedule. This ratio is particularly useful in warmer kitchens where fermentation naturally moves faster and smaller ratios peak too quickly to be practical. It also produces a milder flavour profile over time because the slower fermentation allows less acid to accumulate. A good choice for bakers who don't bake every day and want a starter that can comfortably sit between feedings without deteriorating.

1:10:10 — For the occasional baker
One part starter to ten parts flour and ten parts water. At this ratio, fermentation slows considerably and the starter can go much longer between feedings without becoming over-acidic or collapsing. This is useful when you're going away for a few days, baking very infrequently, or want to give a very tired or overly sour starter a reset by effectively diluting the acid load with a large fresh feeding. It's not a ratio for everyday use, but it has its place and is worth knowing about.

What happens when flour and water aren't equal.
Not all ratios keep flour and water at the same amount, and when they differ, the hydration of the starter changes. This affects how the starter behaves in ways that go beyond just timing.
A 1:3:3 where flour and water are equal produces a starter at 100% hydration, meaning equal weights of flour and water. The texture is loose and pourable, almost like a thick batter.
A ratio like 1:3:2, where there's more flour than water, produces a stiffer starter at around 67% hydration. Stiffer starters ferment more slowly, tend to produce more acetic acid which gives a sharper tang, and hold their peak for a longer window before falling. Some bakers deliberately use a stiffer starter to extend their overnight timing or when they want more control over the fermentation pace.
A ratio like 1:2:3, where there's more water than flour, produces a more liquid starter. Liquid starters ferment faster, bubble more freely, and tend toward a milder, more lactic flavour. They rise less dramatically in the jar but are often very active.
Knowing this means you can adjust not just the amount of food you give your starter, but also its consistency, and use both levers together to dial in exactly the timing and flavour you're after.

Temperature is always part of the equation.
The same ratio behaves very differently depending on your kitchen temperature. In a warm kitchen above 26°C, even a 1:5:5 can move faster than expected. In a cool kitchen below 20°C, even a 1:1:1 might take longer than the usual 4 to 6 hours to peak. This is why feeding ratios need to be adjusted seasonally. In hot weather, reach for a larger ratio to slow things down. In cool weather, a smaller ratio keeps your starter moving at a useful pace. The ratio and the temperature work together, and understanding both gives you real control.

How to choose the right ratio for where you are right now.
Building from scratch: start with 2:1:1 and stay there until your starter is consistently doubling and behaving predictably after every feed.
Baking daily: 1:1:1 or 1:2:2 keeps your starter primed and ready within a few hours of feeding.
Baking every other day: 1:3:3 gives you a comfortable window and reliable results.
Baking once or twice a week: 1:5:5 slows things down and keeps your starter stable between sessions.
Storing in the fridge: feed at 1:5:5 or higher before refrigerating so the starter has enough food to sustain itself through the week. Take it out, feed once or twice at room temperature before baking, and let it come fully back to peak before using it.
Resetting an overly sour or sluggish starter: a one-off feeding at 1:10:10 dilutes the accumulated acid and gives the culture a fresh start without discarding it entirely.

The most important thing of all: watch your starter, not the clock.
Ratios are tools, not rules. They give you a starting point and a rough expectation, but the starter itself is always your most reliable guide. If it's peaking too fast, increase the ratio next time. If it's barely moving, drop down to a smaller ratio. If it smells sharply acidic or alcoholic, it's going past peak before you feed it again. If it smells mild and pleasant, you're likely hitting the timing well.
Feed it. Observe it. Adjust. Repeat. Over time you'll develop an instinct for what your specific starter needs in your specific kitchen, and that knowledge is worth more than any chart or schedule anyone could give you.
