For puff pastry week, we made frangipane galette, pithiviers, bichons, apple turnovers, mille-feuille, and my favorite, palmiers - shaped like little hearts. 🫶🏻

A gentle reminder that having a positive heart doesn't mean you never struggle. It means choosing to keep going, even on difficult days. Psalm 23:4-5 🤍

Chapter 12 - Faith in Choux
Starting Over at 30: From I.T. to Pastry 🌙

Welcome to Project Moon – a chapter series where I share my journey of baking, learning, and chasing a lifelong dream.

It was choux pastry week: six simple ingredients, but so much can happen to the dough when the technique or temperature isn’t quite right.

We made eclairs, Paris-Brest, religieuses, and swans. My favorite was the caramel religieuse - a choux pastry shaped like a nun. 🤍

I also squeezed in a weekend trip to Le Puy-en-Velay. It was a steep climb of more than 250 steps, but the view from the chapel was worth every step!

A little reminder for this season of starting over: do your part, take the next step, and let God handle the rest. 🤍

Sometimes, chasing your dream looks like a 4 AM alarm. 🌙

My first week of pastry school: 4 AM alarms, 6 AM classes, and learning to make classic French tarts by hand. 👩🏻‍🍳

From apple and pear tarts to caramel and nuts, lemon meringue, tartlets, and my favorite, the vanilla flan! 🤍

There's still so much to learn and improve on, but I'm grateful to God for allowing me to do what I love every single day. 🫶🏻

If you're new here, welcome! Thank you for being here. 🤗

I created Project Moon to share more than just the things I bake – it's the story about finding my way back to something I've loved since childhood and having the courage to start over again at 30.

Through Chapters 1–8, I'm so grateful to have shared this journey of turning a childhood hobby into a calling I'm brave enough to pursue.

You don't have to take the full leap today. Maybe you just have to experience the reality of what you're pursuing before you can fully embrace the unique talents and gifts God has blessed you with.
