Koke washing station is located at 1,925 meters above sea level in Yirgacheffe. Over 300 farmers deliver cherry grown in the surrounding area. The distinct wet and dry seasons create prime conditions for coffee processing.

While Ethiopia is famous as coffee’s birthplace, today it remains a specialty coffee industry darling for its incredible variety of flavors. While full traceability has been difficult in recent history, new regulations have made direct purchasing possible. We’re partnering directly with farmers to help them produce top quality specialty lots that are now completely traceable, adding value for farmers and roasters, alike.

The exceptional quality of Ethiopian coffee is due to a combination of factors. The genetic diversity of coffee varieties means that we find a diversity of flavor, even between (or within) farms with similar growing conditions and processing. In addition to varieties, processing methods also contribute to end quality. The final key ingredients for excellent coffee in Ethiopia are the producing traditions that have created the genetic diversity, processing infrastructure and great coffee we enjoy today.

Most producers in Ethiopia are smallholders, and the majority continue to cultivate coffee using traditional methods. As a result, most coffee is grown with no chemical fertilizer or pesticide use. Coffee is almost entirely cultivated, harvested and dried using manual systems.

This coffee is the first time released to the market. The Kenya Kirinyaga Cimba Geisha Natural, which is a specific type of coffee produced by smallholder farmers in the Kirinyaga region of Kenya is known for being made entirely of the Geisha (or Gesha) variety of Arabica and processed using the natural (or dry) method, where the coffee cherries are dried whole. The "Cimba" likely refers to a specific farm or cooperative within Kirinyaga.

Tangy, vibrant, sweetly tart. Tamarind, dark chocolate, lilac, lemon verbena, cedar in aroma and cup. Briskly sweet acidity; very full, syrupy-smooth mouthfeel. Chocolaty, tangy finish.

Many would say that the strength of Sidamo coffees lies in the regions’ diversity of profiles. The many microclimates and varying soil types lead to striking differences from town to town. But across all Sidamo coffees is a profound complexity that many attribute to the diversity of local landrace varieties. Varieties can differ from town to town and even farm to farm where each farmer may have more than one unique variety seldom or never found outside their plot.

When all these different varieties are blended at the local cooperative, the resulting blend expresses the complexity of the plant genetics in the area.

Farming methods in Sidamo remain largely traditional. Sidamo farmers typically intercrop their coffee plants with other food crops. This method is common among smallholders because it maximizes land use and provides food for their families.

The El Paseo farm is located in the municipality of Buesaco Nariño, it has 7 hectares of Castillo variety coffee cultivated at an altitude of between 1,700 and 1,800 meters above sea level, with an average production of 16,000 kg of dry parchment coffee.

With very good characteristics in the cup, this prompted Huver to continue researching and studying the variables and types of fermentation. This unique fermentation method begins with the creation of a mother culture using tropical fruit nectar, particularly from the Citrullus family (watermelon, melon), which enhances the coffee’s natural sweetness and high Brix levels.

Part high quality Colombian coffee, part melon science experiment. Flavored enough by the crazy processing that the crowd will be split on this one but we found much joy drinking it. Be ready for coffee that tastes and smells like varying levels of melon depending on the roast level.

If you love melon, this coffee will be pretty awesome. The melon tones stick right out and balance nicely with the Colombian coffee profile. Lighter roasts were interesting. The cup is bright and clean but be warned, the aromatics and flavor of the melon is very strong, it balances with a very sweet, nutty, buttery textured tone. Pretty much a guarantee one will have not tasted flavors like this in coffee before, but will be a limited crew that likes the light roast point best. We did like lighter roasts better than the pineapple offering, but all in all the cup lacked balance with some normal coffee tones. Medium roasts push the tastes much higher in our book, a little hint of citric acidity, some classic Colombian nuttiness, good body with a clear sweet melon tones, a little stronger in the aromatics but also clear in the tastes. Still unique but links more to traditional coffee tastes. Darker roasts close to second crack present nicely, but into second crack more than a pop or two did pick up a little bitter contrast.

Hand-picked with the utmost care, once brought to the station, the 115 employees of the Halo Beriti station set about washing the coffee. Using a pulper, the beans are separated from their skins, before being washed to remove the mucilage. This operation can take between 12 and 48 hours.

The coffee is then spread out in a thin layer on drying beds, where it will remain for several days, until it reaches a moisture content of 11% and is ready for export.
