Although we currently devote more energy to Arabica coffee, Robusta also boasts a fascinating ecosystem, and I realize there are still many farmers out there who are truly passionate about their work.
This is our third visit this month, and we found our partner family roasting meat; even though it is the off-season, they keep working—whether it’s planting another coffee tree, mowing the grass, or adding a pineapple plant.
They have taught me a great deal about the importance of the ecosystem and the interconnections between plants.
For instance, grafting a coffee plant onto a local variety yields a strong root system and a canopy that provides natural shade; consequently, the tree requires less fertilizer yet maintains lush green foliage and high productivity.

For a time, I practiced "nature-aligned" farming; beyond simply avoiding chemicals, I refrained from pruning the tips to stunt growth, allowing the trees to shoot up just as they would in the wild.
However, this approach hindered my ability to harvest the coffee, and since I am quite short, I decided to manage the garden's height by using a tip-pruning technique.

Vietnam is a powerhouse in Robusta coffee exports, and I hold a special fondness for my partner in this venture.
He is a gentle, hardworking man who constantly strives to enhance the biodiversity of his farm; while I also have extensive farming experience, every visit leaves me pleasantly surprised—and often has me chasing after the chickens in the garden just like a child.
Perhaps my choice to pursue sustainable farming is simply a way of preserving my own childhood, rather than some grand, lofty ambition. Nevertheless, it brings us great joy when customers taste our coffee and decide to take it home.

The first step when taking over a new coffee orchard is to prune trees affected by pests or disease.
A coffee orchard is a complex ecosystem, and issues can arise from various causes that I need to investigate firsthand.
It is entirely manual work—necessitated by the steep terrain and the close spacing of the trees—requiring the use of hand saws and, at times, climbing the trees themselves.
Nevertheless, we carry out the entire process to truly understand our orchard, recognizing that every tree has a unique shape and specific care requirements.

Today marked our first day working at our new farm, following the testing of the roaster and the repair of machinery—some components of which had short-circuited during transport.
There is still a great deal of work to be done, as the orchard had been abandoned for years, though its condition is not dire.
Coffee trees possess a remarkable ability to regenerate shoots; by pruning them to cultivate new growth, we can restore the trees to productivity within about two years. We also discovered some Moca coffee plants—a variety originally introduced to Vietnam by the French. While prized for their exceptional flavor, they are rarely cultivated on a large scale due to low yields and poor disease resistance.
We hope to see the orchard significantly improved by the time the harvest arrives.

We appreciate your patience and support; although the farm is not open to the general public for stay over night, we would be delighted to welcome and collaborate with anyone wishing to visit and contribute to the project.
Our rustic wooden house offers accommodation for interns and coffee enthusiasts who want to discover the story behind their cup of coffee and the farmers who produce it.

After a long journey, we decided to relocate our sustainable coffee project to a new site about a 30-minute drive from the center of Da Lat. Here, we manage a 4,000-square-meter coffee plot situated alongside those of local farmers.

Beyond producing high-quality coffee, we aim to implement organic farming methods—approaches I had never previously applied to Arabica coffee (having focused on Robusta in the past).

The site is located in Siêng, an ethnic minority village; the locals are gentle and unpretentious, and I hope to collaborate with them in the future, alongside the farmers we have already been working with.

The coffee trees here face several complex challenges, including nutrient deficiency, leaf rust, branch and fruit dieback, and stem borers. Nevertheless, we remain optimistic that everything will go smoothly.
