Why?

Running a bakery from the home is hard, and not ideal. It takes over everything. The wear and tear on floors, appliances, counters, and everything is significant.

The rules and regulations governing cottage bakery businesses are, well, let me just say, not great for growing a business.

I am grateful to all my customers, especially those that REALLY understand and appreciate what fresh, whole, naturally leavened real bread is. I am sad to not be able to bake for you anymore.

I am pessimistically hopeful that someone in central Ohio will grasp the reins of the fresh milled, whole grain, naturally leavened Real Bread campaign

I am going to renew a focus on health, family, and home, so that we can do the things we really love.

Boule or Loaf?

The traditional boule is a self supported loaf that sports a nice amount of delicious crust.

A loaf, is baked in a confining container (a bread pan) and make a square-ish loaf.

I never want my breads to make anyone cry, especially ‘s sweet kiddos. It is totally normal for food, especially bread, to fire up emotions, right?

I do think it’s amazingly cool that most kids really like brown breads.

Don’t worry little one, I’m going to keep making fresh milled whole grain naturally leavened (sourdough) breads. Real flavors, real bread.

Rush Creek Bread looks forward to seeing you at our Farmers Market again this morning. Baker Pete and family grew up in Worthington and live just a few blocks from the market in Rush Creek Village, that’s pretty local.

As always, our breads on offer are Freshly Milled (by us, within hours of mixing the doughs), always 100% Whole Grain (no need for “enrichment” to manufacture shelf stable faux whole wheat flour), always as locally sourced as possible (on our labels we are gf FB disclose the identity of the amazing farms we source from, the majority of which is Ohio grown - not trucked in from industrial mills west of the Mississippi). Sourdough, is a process (even though some treat it as a flavor) - our breads are always Naturally Leavened (no chemicals, commercial yeast, or other leaving assistants or dough conditioners). Always read your labels.

FULL OF FLAVOR freshly milled, locally sourced, whole grain, naturally leavened breads. Real Bread.

Each grain of wheat is its own long term storage container. Once the seal of that package has been broken the proteins, oils, and other nutrient compounds in the grain are exposed to air and start to respond. Oxidation, evaporation, and I don’t know what all else.

What I do know is a lot of store flour is very white and bland. A blank canvass one might say… It is white and bland because it is mostly the starchy endosperm of the grain. Most of the bran (fiber and nutrients) and germ (packed with nutrients- it’s the kickstarter power pack for the grain if it were to sprout and become a living plant).

Not me. To me, bread isn’t simply the platform for other ingredients. Nope. Bread is the staff of life. Bread and cultivated wheats are an integral part of the human experience and the vast variety of wheats each with their unique characteristics is what I want to experience.

Every loaf of Rush Creek Bread supports the diversification and re-localization of this important component of our diet.

All of this to say, I do it all for the flavor. The health benefits are a happy bonus.

Rush Creek Bread is locally sourced organic fresh milled (by RCB, as needed, on demand) whole grain (ALL the grain, bran, germ, endosperm), naturally leavened (sourdough) real bread. Flour, water, salt. Simple. Full of flavor. As it should be.
