Why Fresh Milled Flour?
Milling wheat berries and other ancient grains fresh into flour is much different than using store bought flour, which is ultra processed to remove vital nutrients from the berries and pumped with preservatives and fillers to keep it shelf stable.
Milling whole berries just before baking keeps all the nutrients that would be removed in processed flour from the store. Baking fresh after milling keeps oils, vitamins and a natural sweetness.
Fresh milled flour retains B vitamins, vitamin E, magnesium, iron and zinc, and much more.
Among other things, the wheat germ in the berry is preserved in the flour, whereas in store bought, it is removed. Wheat germ contains natural healthy oils our bodies need.
Fresh milled flour also retains healthy fats that support cell health and hormone balance, and contains a higher fiber count. Many people also see a lower glycemic response because the body digests whole grains more slowly, steadying blood sugar and promoting longer lasting energy.r
