My oldest is turning 12! This year's cake request was the Traveler's Cake from Genshin Impact. This is a 3 Layer Chocolate Sponge Cake with Strawberry Mousse Filling and Strawberry American Buttercream Frosting.

This is my first mousse filled cake and the first I've piped roses.

Tomorrow is my 34th trip around the sun! To celebrate I chose to expand my skills with making a Japenese Strawberry Shortcake! 🍓

This cake style is close to a traditional sponge cake using whipped egg whites and a bain-marie (water-bath) for baking, then layered and topped with homemade stabilized whip cream, and macerated (sugared) strawberries.
