There’s a short window for fresh rhubarb, and we’re making the most of it with this Rhubarb Almond Coffee Cake. The tartness of the pink stalks melts into the sweet batter, all topped off with a thick, cinnamon-spiced streusel.

We added a generous handful of sliced almonds to the crumble topping for an extra layer of toasted crunch that perfectly complements the soft cake. Who wants a slice?!
