Waxwing Bakery team does Pilates for the first time!

We had an absolute blast trying out reformers Maine Pilates in Windham. Thank you so much for having us.

Rhubarb custard danishes are back! They’re filled with strawberry rhubarb jam and vanilla custard and topped with fresh rhubarb from Lori Robinson Jones and toasted pistachios for crunch. Don’t be fooled by their flashy strawberry danish counterparts, these are just as delightfully fruit forward.

We’ve got olive focaccia and our usual country and seeded sourdough loaves AND we’ll have roast pork sandwiches out at 11 today!

Strawberry Danish today with vanilla custard and fresh local strawberries.

We’ve got asparagus danishes and quiche slices with green garlic and locally grown mushrooms.

It’s exciting to see local seasonal produce starting to come in and we are so pumped to showcase what our Maine farms have to offer.

Come taste the first strawberries of the season and grab a iced coconut milk horchata while you’re at it 😉

There’s a reason we’ve had the sausage rolls on the menu since the beginning when we we’re doing pop ups . We make the sausage in house from pork we get from and flavor it with maple, sage and chile. Then wrap it all up in our flake all-butter pie dough. It’s all made in house and that makes all the difference, come try one and see what it’s all about! 😋

But if sausage rolls aren’t your thing, we’ve got a great slice line up today including our June cake flavor of olive oil cake with rhubarb compote, labneh and strawberry buttercream. And a blueberry rhubarb pie made with rhubarb and blueberries.

New savory danish hitting the counter this morning: asparagus and herby ricotta with chive blossoms, nigella seeds, Urfa and a little sumac zing.

Quiche is extra spring- y with green garlic, mushrooms and Gruyère.

Olive loaves are bustin’ out all over like June and we’ve got a sunny warm day ahead of us. Come grab a blueberry lemonade or iced coconut milk horchata.
