I haven’t posted much lately. This last order kept me super busy. I made around 500 bite sized pies as well as brownies bites and this cake.

A year ago, I was in an open air kitchen in Oaxaca, Mx, making my daughter’s wedding cake. Tomorrow is their first anniversary.

My daughter’s wedding cake I got to make in an open air kitchen in Oaxaca, Mexico.
A vanilla cake with blackberry compote and lemon curd fillings. A whipped icing. I also made 4 sheet cakes for easy serving.
A few challenges,
Bringing and buying necessary cake making supplies.
Using ingredients I am not used to but finding we like the flavor better, now to find those ingredients here.
Making powdered sugar in a blender.
Baking at a higher elevation.
Open air kitchen means warm weather for whipping icing oh and mixer mishaps.
Delivering this cake and 4 sheet cakes in a taxi.
A few other but i am grateful to the wonderful family who let me cook in their Airbnb, the cakes made it and were enjoyed by all.
