Roast Turkey in a Bag

Ingredients:

1 whole turkey (12-16 lbs), thawed
1/4 cup unsalted butter, softened
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon paprika
1 teaspoon dried thyme
Salt and pepper, to taste
2 large onions, quartered
3 stalks of celery, cut into chunks
2 carrots, cut into chunks
4 cloves garlic, peeled
1 tablespoon flour (for the oven bag)
1 oven-safe roasting bag

Directions:

Preheat your oven to 350°F (175°C).
Clean the turkey by removing giblets and rinsing thoroughly under cold water. Pat dry with paper towels.
In a small bowl, mix softened butter with garlic powder, onion powder, paprika, thyme, salt, and pepper.
Gently loosen the turkey skin over the breast with your fingers and rub the seasoned butter under the skin and over the entire turkey.
Toss the onions, celery, carrots, and garlic into the cavity of the turkey for added flavor.
Sprinkle 1 tablespoon of flour into the oven bag, shaking it to coat the interior.
Place the turkey in the bag and then onto a large roasting pan. Seal the bag securely with the tie provided, trimming any excess. Cut six small slits in the top of the bag to allow steam to escape.
Roast the turkey for approximately 2 1/2 to 3 hours, or until the internal temperature of the thickest part of the turkey (thigh) reaches 165°F (74°C).
Carefully cut the bag open to expose the turkey and allow it to brown for an additional 10-15 minutes if desired.
Let the turkey rest for 20 minutes before carving.

Greek Chicken Gyros 😍😋
Ingredients:
For the chicken marinade:
1 pound chicken thighs, boneless and skinless
2 tablespoons olive oil
Juice of 1 lemon
3 cloves garlic, minced
2 teaspoons dried oregano
Salt and pepper to taste
For the Tzatziki sauce:
1 cup Greek yogurt
1 cucumber, grated and drained
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon fresh dill, chopped
Salt and pepper to taste
For serving:
4 pita breads
1 tomato, sliced
1 red onion, thinly sliced
Fresh lettuce

Directions:
Marinate the chicken:
In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add chicken thighs and make sure they are well coated with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the Tzatziki sauce:
In another bowl, mix Greek yogurt, grated and drained cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper. Cover and refrigerate to let flavors meld.
Cook the chicken:
Heat a grill or skillet over medium-high heat. Remove chicken from the marinade and cook for about 6-7 minutes on each side or until fully cooked and slightly charred. Remove from heat and let rest for a few minutes before slicing thinly.
Assemble the gyros:
Warm the pita breads on the grill or in a dry skillet. Place slices of cooked chicken on each pita, followed by slices of tomato, red onion, and a handful of lettuce.
Top each gyro with a generous dollop of tzatziki sauce.
Serve:
Fold the pitas over the fillings or roll them up. Serve immediately while warm.
