Vermont's sugaring season brings the opportunity for so many delicious treats. These might even qualify as a breakfast treat!?

Maple Monday! Maple Oatmeal Cookies

Ingredients:
½ cup butter, room temperature
1 cup maple syrup, I use Dark Robust
1 1/2 cup flour
1 teaspoon salt
2 eggs
2 teaspoons baking powder
½ cup milk
11/2 cup rolled oats
Options – ½ cup raisins, ½ cup chopped walnuts, ½ cup natural peanut butter

Directions:
Beat butter, syrup, eggs and milk. Sift flour, salt and baking powder, combine with wet ingredients. Add oats and any optional ingredients. Drop by spoonful's on greased cookie sheets and bake at 350 degrees 15 minutes or until browned.

Sweet Harmony @ home:
While not delivering baked goods anymore from my kitchen to yours, I am always sourcing and baking great recipes. I will be posting sharing them here and on my website for you to try in your own kitchen.

Just happened to make my favorite Banana Bread recipe yesterday to use up bananas after returning home from vacation.
Cream:
1/2 cup unsalted butter, softened
1 cup sugar
Add and blend in:
2 unbeaten eggs
1 cup mashed bananas
1/2 cup sour cream or creme fraiche
Combine and add to wet ingredients:
2 cups King Arthur Flour all-purpose flour
1 ts. baking soda
1/2 tsp. salt

Butter and parchment paper 9" loaf pan and or use parchment liners in a muffin tin. Bake @ 350* for 45 min. if using loaf pan, 25 min. if making muffins. Check for doneness by tapping tops of muffins/bread - bread should just spring back when done. Enjoyed best warm with Kerrygold salted butter!

Brilliantly simple and "peachy keen" - Perelman: smitten kitchen is still a go to for me. This basic indulgence looks sure to please. I might even venture to pop the peaches on the summer grill in a cast iron skillet for an added touch of smoky flavor infusion. Enjoy!

I hope, if we are going to continue to be good friends, that we can have an implicit understanding that there is no such thing as too many peach recipes. Not in July, not in August, not in New York…

Rhubarb just brings out the best in Strawberries, especially when baked in a buttery tender pie crust. The simple free form crust creates a wonderful Rustic Strawberry Rhubarb Tart.
