Every year, our inbox gets flooded with school supply requests, and while we wish we could stock every classroom in Robertson + Sumner County, we had to find the smartest way to make the biggest impact.

I take a lot of pride in my sauces! Thanks to researching online, as well as guidance from the Public Health Microbiology Foundation at Tennessee State University, I have products that are consistent and SAFE, as well as delicious!

The process requires that I bring my sauce to a boil, then simmer it for a minimum of 15 minutes while maintaining a minimum temperature of 185F degrees. It also requires that wipe the rim of each jar with distilled white vinegar (minimum of 5% acidity) to get a proper seal. I also invert each jar of my sauce for a minimum of one minute to achieve longer-lasting freshness. And last, I keep a minimum of 1-2 jars of sauce to open and both test acidity and water levels at 24 and 48 hours post-production, ensuring they are within the proper ranges. This also allows me to test my sauce for the quality of the flavor and spiciness!
