Today, I'm working with spelt! It's an ancient grain, likely a hybrid of wheat and emmer, which was what the ancient Egyptians grew. Spelt sourdough is apparently appropriate for a FODMAP elimination diet and a couple of people have requested it, so here we go! Let me know if you're interested in trying it.
I'm also going to be making some Harvest Grains sandwich bread and on Saturday I will be making Focaccia that will be ready for dinnertime in my new fancy pans from Lloyd Pans. My regular wheat and white sourdoughs are always available if you give me a day's notice.
Spelt (Triticum spelta), also known as dinkel wheat[2] is a species of wheat. It is a relict crop, eaten in Central Europe and northern Spain. It is high in protein. In Australia it is marketed as a health food.
