Trying to perfect an “open bake” sourdough loaf.

Traditionally (and what I normally do), sourdough is baked in a vessel like a Dutch oven or clay baking pot. This is to trap steam that encourages a tall rise and a golden, crunchy crust. You can mimic this process by baking openly on a pizza stone and adding a sheet pan of boiling water underneath.

Not bad for a first try on this technique, but definitely a couple things I’ll change for the next bake!
