Here’s a truth most beginner bakers don’t hear enough:

Your dough doesn’t own a clock.

A recipe might say:

“Let the dough rise for one hour.”

That’s not a promise; it’s just a guess.

Your dough might be ready in 45 minutes.

Or it might need two hours.

It depends on:

1. Temperature: — Warmer rooms make dough rise faster, cooler rooms slow it down.

2. Flour type: — Whole grain flour ferments faster than white flour.

3. Hydration: — Wetter doughs usually rise quicker.

4. Yeast activity: — Sometimes your yeast is lively, sometimes it’s sleepy.

If you treat the clock like a hard rule, you’ll get inconsistent bread.

One batch will be underproofed.

The next will be overproofed.

And you won’t know why.

Instead, watch your dough, not the minutes.

Signs your dough is ready:

•- It’s doubled in size (or close).

•- A gentle poke springs back slowly, leaving a slight dent.

•- It feels airy and lighter than before.

•••

Signs it’s gone too far:

•- It’s collapsed or deflated.

•- Poke test leaves a deep dent that doesn’t spring back.

•- It feels weak, sticky, and hard to shape.

Once you learn to read the dough, you’ll never be trapped by the clock again.

And your bread will turn out better, every single time.

Your dough doesn’t care about time.

It cares about readiness.

So should you.

What’s the dessert that feels like home to you—the one that warms your heart and makes everything feel a little better? 🍪🍫🍰

For me, it’s a chocolate chip cookie still warm from the oven with a cold glass of milk. Simple, sweet, and comforting.

Another quick update: we supposedly will be able to move into our apartment by the 1st of September by the LATEST now. Thank you all for sticking around through all the chaos! I will continue to update as I get more information.
