I had hoped to celebrate grandma Cassie’s birthday yesterday by giving away some croissants. They aren’t cute, but thought they’d taste good. Until I realized they weren’t done on the inside.
Croissant fail. No birthday giveaway this year. 😭

In the world of sourdough baking, getting an “ear” on loaf is much desired!
What’s an “ear?” A sourdough ear is the extra crunchy flap of crust that forms on your sourdough bread while baking.
These 2 gorgeous loaves came out with gorgeous ears this morning!

DAIRY & GLUTEN FREE Sourdough sandwich bread test tasters needed
The first picture is of the ingredients I used.
The second picture is how the bread came out of the baking dish. 😒 I’ll be purchasing a non-stick loaf pan to use for GF/DF loaves.
Once it cools I’ll slice it and put 2 slices in as many bags as I can.

What is a sourdough starter?
The "simple" answer: It is an active colony of wild yeast and good bacteria cultivated by combining flour and water and allowing it to ferment. By feeding it consistently and keeping it in happy conditions you end up with a “natural yeast” culture that can be used to leaven (raise) breads and pastries.
It's totally normal for people to name their starters - if you don't already know, my starter is named Cassie.

My grandma, Cassie, passed away unexpectedly in 1956 just a few months before my mom turned 3 years old. I've been told that I share many similarities with Cassie. It makes sense, because I always remember feeling a connection with her, although, I never met her.
I recently spent some time learning all I could learn about sourdough and how it is made. The deep history of sourdough intrigued me. For centuries, families would name their sourdough starter after a loved one and it would be passed down through generations.
I kind of felt cheated because my family doesn't have a sourdough starter - named after a loved one - maintained daily - and passed down through generations.
So developed my own sourdough starter and I named it Cassie, of course, after my grandma.
I have fallen in love with the traditions, the history, the process of making sourdough. And I feel like I've found a way to honor my Cassie and keep her story alive.

So many are asking what I have up my sleeve.
Here’s a teeny tiny lil hint to keep you guessing a little bit longer. 😉
Before I even start, I need to make something really clear.
I’m a broken person. I screw up daily, which is why I am so thankful for God’s grace and mercy. If you have the impression that I’m “perfect,” well, sorry to break it to you, but I’m not.
I have struggled with anxiety for years. About 3 years ago I was having a really high anxiety day, so I reached out to a friend for some encouragement. She was so sweet and sent me a passage of scripture. I looked it up, and unfortunately, it didn’t do a darn thing for me. It didn’t speak to my heart. It didn’t resonate with me at all. It just left me confused, to be honest.
So, like I always do in times of confusion, I turned to my trusty friend, Google. And from there I stumbled across a video about verse mapping. So I watched it and then went back and verse mapped the scripture my friend had sent me with the intention of encouraging me.
And that’s when the game changed for me. Y’all, it was as if Jesus was speaking directly to ME. For the first time, I felt like I could hear Him.
Since then, I have not stopped verse mapping. I’ve begun carrying God’s word in my heart and applying it in my own life like never before. Little by little, I started teaching close friends how to verse map, which led to leading a breakout session at my church during a Women’s Conference. And that led to being invited to lead another breakout session at a Women’s Conference in a whole different church a few counties away! After that Conference, ladies were asking me for business cards and how to book me to teach verse mapping at their churches. I was shocked.
Apparently, God’s got a plan for me that involves teaching, so as long as He opens doors, I’m going to walk through them.
