Banana Cream Pie Cookies

RECIPE:
1 ʙᴀɴᴀɴᴀ (sʟɪɢʜᴛʟʏ ʀɪᴘᴇ)

1 ᴛsᴘ. ʙᴀᴋɪɴɢ ᴘᴏᴡᴅᴇʀ
1 ᴛsᴘ. ᴠᴀɴɪʟʟᴀ
1 ᴛsᴘ. ʙᴜᴛᴛᴇʀ ғʟᴀᴠᴏʀɪɴɢ
3/4 C. ʜᴇᴀᴠʏ ᴡʜɪᴘᴘɪɴɢ ᴄʀᴇᴀᴍ
2 1/3 C. ғʟᴏᴜʀ
1/2 C. ɢʀᴀɴᴜʟᴀᴛᴇᴅ sᴜɢᴀʀ
1/4 C. ᴘᴏᴡᴅᴇʀᴇᴅ sᴜɢᴀʀ
1/4 ᴛsᴘ. sᴀʟᴛ
1/2 ᴛsᴘ. ᴠᴀɴɪʟʟᴀ
1/2 ᴘᴀᴄᴋᴀɢᴇ ᴠᴀɴɪʟʟᴀ ɪɴsᴛᴀɴᴛ ᴘᴜᴅᴅɪɴɢ
ᴍɪx -small box (if you like a strong
banana flavor you can use banana
pudding mix or a combination of
the 2)
1/3 C. ᴠᴇɢᴇᴛᴀʙʟᴇ ᴏɪʟ
1/2 C. ʙᴜᴛᴛᴇʀ
1/2 C. ᴍɪʟᴋ
Nɪʟʟᴀ Wᴀғᴇʀs

Banana Cream Pie Filling:
-beat the heavy cream, 1/2 tsp vanilla and pudding mix until very thick
-fold in the chopped banana
-cover with plastic wrap and
refrigerate until ready to use.

Cookie Base:
-Preheat oven to 350 and line baking sheet w/parchment paper
-Cream butter, oil and both sugars.
-Add egg, vanilla and butter flavors and mix until combined.
-Add the flour, salt and baking powder and mix until combined.
-Using a large cookie scooper, scoop out 9 equal sized cookie balls.
-Place on cookie sheet and flatten slightly with the bottom of a glass making a small well for the icing.
-Bake ~10 min (dont let them get
brown or they will be too hard)
-When completely cooled top with the icing, Nilla wafer crumbs and a Nilla Wafer in the center.

It is with mixed emotions that I tell you that as of Jan 1, 2025, I will no longer be making cookies.
When I started this journey 5 years ago, I was an empty nester with free time on my hands and what started out as a hobby, well, I was getting as much work as I wanted. Now, 3 grandchildren later, I’m retired and wanting to spend more time with my family. I am blown away by all of the support you all have given me and trusted me with your very special occasions! I have made thousands of cookies for you all and want you to know that every single one was made with love! 💕
I am forever grateful for all of you!
