Catch me at the Stone Memorial Building for our town wide yard sale 🄳 I’ll be sure to bring as much as I can bake the day before. I’ll have cinnamon rolls, some breads, I like to bring some focaccias usually. Oh and my strawberry vanilla cakes with homemade whipped topping!

My results:
Fresh and freeze dried mango turned black in the bread. So for aesthetic reasons, I preferred the dried mango chopped up. (Think bananas in your banana bread)
The dried mango had the most fruity flavor.

Freeze dried mango became rehydrated in the sourdough so it was very similar to adding fresh mango after the cold proof.

The mango salsa and habanero cheese bread has a fun flavor. Salsa has more ingredients and more flavor.

šŸ†But the winner for me is the dry mango and fresh habanero. When cooked the mango became softer, it didn’t mess with the hydration levels as much I got a beautiful rise in my bread and nice color.

I’ve never made habanero mango bread before but I wanted to try a couple new methods. All I have to do now is try a fresh mango šŸ˜‚ I hate cutting them so I didn’t grab one but it seems like the obvious answer here.

I am testing mango salsa with habanero cheese.

Freeze dried mangos and fresh habaneros

And dried mangos with habanero.

They are cooking now but the taste test will be shortly.

Playing around with marble rye. It’s a challenge getting 2 doughs to ferment at the same rate with different ingredients (sugar speeds up fermentation) and half of this loaf has molasses in it. This was my first attempt and I think she came out pretty!

Ok I wasn’t going to say anything because I didn’t know if I could do it. But I really wanted to have something available for Mother’s Day.
I’m a mom, I have a mom, we have opening day with sports this weekend so I will have on Saturday only- porch pick up, Blueberry Lemon cinnamon rolls take and bakes with lemon cream cheese frosting.

These have been hours in the works so don’t sleep on it. There is freshly squeezed lemon juice and zest in the sourdough, slowly fermented. I whipped butter cinnamon brown sugar and cardamom for the first layer of filling followed by a blueberry compote of wild blueberries, lemon juice and brown sugar. I threw in a couple whole blueberries as I rolled them. Each pan comes with 8 mini rolls, bake at 375 for 25-30 minutes with a sprinkle of cream or milk on them and then smother with the lemon cream cheese frosting I have made with fresh lemons and zest. I only have 6 pans. $15 each let me know if you’d like me to reserve one for you!

I can only bake 2 loaves at a time because I bake them in my nonstick loaf pans which gives the entire outside that golden color, and I only own 2 of those pans. Each one is 860-890g after baked (950g pre bake). I’ve topped them with an egg wash.

One of these loaves has been claimed but I do have an extra if you’re interested!

I’m including the nutritional information if you’re into that because I recently have been.

I am gearing up for the week I have 2 loaves of protein sandwich bread I’ll be baking this afternoon and I’m testing out a very special rye. A friend gifted me with organic locally grown flour and I’m very excited to incorporate it into a few items! ā¤ļø

Yesterday I brought blueberry lemon (protein šŸ’ŖšŸ½) sourdough cinnamon rolls into the community.
This act of kindness was done in memory of Charlie.

I never personally knew him but I received an act of kindness from those who knew and loved him while I was staying with our youngest at B*H 3 years ago. I like to pass it on. šŸ’›
