Last April I started working with a nutritionist and so sometimes I experiment to make the most nutrient dense baked goods for myself. I don’t like when things taste like protein powder but I do like when one mini muffin has 5g of protein in it. I’m so proud of myself because I literally made up this recipe from scratch!
Ingredients
* 1.3 cups oat flour (I did 2 cuts of Quaker Oats in the food processor until it was like flour)
* 2/3 cup active Sourdough starter
* 2 tablespoons flour
* 4 scoops Ancient Nutrition Chocolate Bone Broth Protein Powder
* 110g banana (one banana)
* 50g honey
* 1/2 cup sugar
* 1/2 cup unsweetened cocoa powder
* 1 tsp baking powder
* 1/2 tsp baking soda
* 1/4 tsp salt
* 3/4 cup non fat Greek yogurt
* 3/4 cup coconut oil melted
* 2 large eggs (room temperature)
* 1 tbsp pure vanilla extract
Then I made PB fit peanut butter and put it in the middle of my mini muffins, so I did muffin batter/PB/Muffin batter. And baked at 375 degrees for 12 minutes.
Between the Greek yogurt and protein powder each mini muffin has approximately 5g of protein.
And like with all recipes I will fine tune it as I keep trying it out.
