NEW JAM FLAVORS COMING SOON!!
We are a Cottage Food Bakery, until we go commercial. This means we have to comply with Michigan Cottage Food Laws. The laws, as written, can be confusing and have gray areas. The jam law states you CAN make a fruit jam with high acid fruits and add in a small amount of low acid foods. This would include our Apricot Habanero Jelly, Peach Jalapeno Jam, and Pineapple Jalapeno Relish. But, after speaking with our local Michigan Department of Agriculture and Rural Development inspector, she stated we cannot make these to sell, so we did not argue and will wait until we have a commercial establishment to make and sell those products. We are waiting on an answer to whether we can add in dried pepper flakes for an extra kick.
In the meantime, we've found some new safe and tested jam recipes we hope you'll love! Please keep in mind with safe canning you cannot just make up your own recipe or use a recipe intended for cooking, you must use a tested recipe from one of very few reputable sources!(Ball canning, National Center for Home Food Preservation, College Extension Services) There are some foods, like pumpkin, that can not be safely canned at all. Cottage food makers are not allowed to make pickled products either, or any fruit butters.
We just wanted to let you know that a few of our regular products will no longer be available to purchase as we work under cottage food laws. We can use those jams to make some other products like our Pineapple Jalapeno or Apricot Habanero Cornbread! Stay tuned, y'all!
