Naturally leavened, long-fermented, and bursting with summer berries — these are not your average sweet rolls.
How the long ferment works:
• Slow + cool rise (24+ hrs): Wild yeast and lactic acid bacteria pre-digest parts of the dough — breaking down gluten and starch for a tender, easier-to-digest crumb.
• Natural acids: Fermentation creates organic acids that lower the dough’s pH, helping slow how fast sugars hit your system — and giving that delicious, complex tang.
• Nutrient unlock: Enzymes reduce phytic acid (the “anti-nutrient” in grains), so your body can absorb more of the good stuff.
