Green Truck Bakery We make 18 different Artisan Breads, Croissants, Flat Breads, Cinnamon Rolls, Sticky Buns, Savory Cro Our bread starts with splitting wood. We then build a fire.

And then we wait. Once the oven reaches the desired temperature, we bake. We have 18 different flavors, ranging from a tasty sourdough to a four seed hearty bread. Other flavors include cranberry almond, sesame semolina, roasted potato, olive herb and our popular finish rye. All of our breads are made with the finest natural ingredients and given the care it takes to produce the best hand crafted bread in West Central Missouri.

Soft, lightly spiced, made completely from scratch. We're taking pre-orders now for pickup Saturday, April 4th — just in time for Easter weekend. Order online or in-store before they're gone.
Observing Passover? We're also making unleavened bread — simple, traditional, baked fresh in-house. Keep an eye out.

Our sourdough is available sliced and frozen all week — and here's something worth knowing:
Freezing sourdough actually changes the carbohydrate structure, increasing resistant starch. That means it can be easier to digest, slower to spike blood sugar, and gentler on your system overall. If sourdough has ever felt heavy or hard to tolerate — frozen might be your answer.
