This is why I keep a stiff starter rather than a liquid starter.

Feeding 1:10:8 (1 part starter, 10 parts flour, 8 parts water) gives me about 18 hours before it peaks and needs to be fed again.

A 1:1:1 ratio is great for making a new starter from scratch, but not for maintenance needs.

A low ratio feed means your established starter peaks in just a few hours, is at high risk of becoming too vinegary, and would require you to keep it in the fridge to keep it healthy.

Giving big feeds gives extra time between feeds, and keeps the colonies of yeast and lactobacillus balanced and healthy without the refrigeration that can impair lactobacillus.

It also means that my dough is less likely to overproof and “deflate” while trying to bake it!
